Under reporting of fat in PCRM recipe?
Posted Monday, March 22, 2010 at 5:38 PM

I got e-mail from PCRM and I am having trouble with the fat calculations. The recipe calls for 1/2 cup of Tofu Mayo or other vegan mayo substitute. I looked up the nutrition data for Vegenaise and found that one tablespoon has 90 calories (80 from fat). It takes 8 tablespoons to make 1/2 cup, thus the recipe calls for adding 640 fat calories in the mayo alone. Since the recipe is making 12 servings, each serving would have 53 fat calories. However the nutrition data included with the recipe says that each serving has only 39 calories with about 4 of those calories from fat. That's not even close. So what am I missing?

Rainbow Salad

Cabbage and carrots team up to make a beautiful and delicious salad.

Directions

Makes 12 1/2-cup servings

2 cups shredded green cabbage
2 cups shredded red cabbage
2 carrots, grated or julienned
2 celery stalks, thinly sliced
3 green onions, sliced
1 apple, finely chopped or julienned
1 tablespoon lemon juice
1/2 cup Tofu Mayo or other dairy and egg-free mayonnaise substitute
1/3 cup apple juice concentrate

Combine cabbage, carrots, celery, and green onions in a salad bowl. In a separate bowl, toss apple with lemon juice. Add to salad. Add Tofu Mayo other dairy and egg-free mayonnaise substitute and apple juice concentrate and mix well. If possible, chill before serving.

I remember Jill (from PCRM) recommending the fat-free Nayonaise brand at one point. Probably this calculation was done using something other than Veganaise. A homemade vegan mayo from silken tofu would be somewhere between the FF Nayonaise and the rich Veganaise.

Maybe they used this--it's by the same author and available in the NutritionMD database.

The tofu mayos I use are much much much lower in fat than Vegenaise, which is almost 100% fat calories. This is my favorite one: http://www.drmcdougall.com/forums/viewtopic.php?f=5&t=5828&start=0

I am pretty sure that they are specifically referecing the Tofu Mayo recipe on the NutrtionMD site (linked above)...because the fat grams in THAT mayo are the fat grams of THIS recipe.

Hello. Let me confirm what everyone else has already said.

Tofu Mayo is a PCRM recipe that we are recommending you use instead of some of the commerical brands. Tofu Mayo is very low in fat. The Rainbow Salad recipe links to the Tofu Mayo recipe if you click on the ingredient.
