What is your food today Sat Jan 15th?

Hi!! We are more than 1/2 way thru! I for one don't want it to end. Can't we just do a "365 Alive"? I guess I will have to check out other boards. I know I have found a few new websites and blogs that offer ideas. Anyway... today is a cooking day.. not for a week.. but for the weekend and maybe the beginning of next week. I am in the process of soaking the package of mixed beans (9beans usually made w/ham) ... i bought Kale for the first time..I am thinking it might be good in soup. So it's a veggie broth soup with veggies & beans..go figure!! I will throw a whole grain in there.. probably barley. Looks like the soup will be celery, carrots, onions, green beans, & kale. I was thinking of switching it to "witch's brew" and adding a can of beer.. cooking it long enough to boil of the alchol. Maybe I will add it to a small amount to see if it's good. To go with the soup.. i will probably make either cornbread or whole wheat biscuits. (i switched from rolls to biscuits, because biscuits don't take all day long to make and taste just as good) For dinner i am planning on making the rips burritos .. that video made them look good.. we already had most of the ingredients anyway... Just for haa haa's i am going to make a second soup today.. i got a hankering for that broccoli soup.. i wonder if nutrional yeast would make it taste cheezy..???

b: cereal as usual l: leftovers, probably leftover "hubby surprise" bean soup from last night d: nachos with black beans, not cheese sauce, baked chips, salsa probably a tossed salad on the side s: fruit (I'm heading to the grocery store, so it could be anything, whatever looks good and isn't horribly expensive) we'll also be making the filling for two dozen sandwiches to take to a memorial service tomorrow (we'll build the sandwiches tomorrow so they don't get soggy). DH noticed when he was making the vegan quiche, that the base mixture looked a lot like tuna. So, we're making a faux tuna salad (navy beans, celery, carrots, onion, a bit of mayo) to go on some nice pumpernickel bread with baby spinach leaves. --Deb R

Cch, I think nutritional yeast would work well in soup. it seems to be pretty versatile. But I haven't tried it in soup, so I could be wrong.... Please let us know how it works. Breakfast was mashed potatoes and steamed broccoli and cauliflower. Non-traditional, I know, but I sometimes like supper for breakfast and breakfast for supper. Lunch was haystacks. Corn tortillas, baked into chips and lightly salted, topped with fat free refried beans, vegan queso, salsa, shredded lettuce and tomatoes. I think dinner will be pasta primavera. I am looking at my recipe books now to get inspiration. I may do it with an Asian twist (tamari, chili paste, ginger). Snacks: fruit. Maybe a baked apple with cinnamon.

I tried making the cornbread muffins and they were AWFUL. I was so disappointed. I followed the recipe exactly so I'm not sure what happened there. Otherwise I had a great day! I got to visit with my friend who works with rehabbed owls - and the veggie chili recipe for dinner was AMAZING. HI Lisa, I made a version of those cornbread muffins.. I left out the apple juice. Instead i put in 4TBSP Sugar, 3/4 cup applesauce, 3/4 cup unsweetened soymilk, and 1/2 cup water. Next time i think i will replace the sugar with honey or agave. That turned out pretty good. They are a bit heavy but tasty. I found the best whole wheat biscuit recipe yet.. it does have fat.. vegan butter.. and flour... so it's not a diet food... I used 1 cup whole wheat flour, and 1 cup whole wheat pastry flour. I also added about 2-3 Tbsp of honey. They were light and fluffy. I really did use the advice to keep everything cold. http://www.ehow.com/how_5889222_make-fluffy-vegan-biscuits.html

Breakfast: Kickstart Banana Oat French Toast with a little bit of maple syrup...Wow! tastes Better than regular french toast Snack: Smoothie made with frozen banana, cocoa powder, and and rice milk Lunch: Leftover curried lentil soup Dinner: Pippin's haystack idea sounded so great but I was too tired to make chips so I baked the whole tortilla and made tostados using same toppings as the haystack except vegan queso only because I didn't have any. hope to try the vegan queso in the future; Thanks for the idea Pippin! Dessert: Chocoate Raspberry Mousse - delicious!

oh lisa btw.. i didn't mix with my fingers or a fork as the recipe suggests.. i just used my mixing spoon. I mixed gently and just until the dough was all moistened. It was a bit wet looking.. but when i patted out the biscuits.. i had a floured board.. so it was fine. We couldn't believe they were completely whole wheat biscuits! I am wondering how much of that was using the whole wheat pastry flour....

Ok so last night I made veg. tempura and used one egg in the batter, which made alot of tempura-so I ingested some egg, but not much...back on track today with: vegan waffles, syrup some pistachios, black bean soup, 1 orange felafel in pita pocket with soy yogurt/cucumber sauce, along with sweet & white potato fries -my stove is on the blink, so I'm using my wok, rice cooker & waffle iron alot these days!

cch22 I agree in that I don't want this to end either. It is the support/information on the kickstart web site, recipe ideas and eveyone who is participating in the community forum that has kept me motivated and mostly (2 slips) on track. I don't want to go back to my old way of eating through laziness which would be easy to do. I work in a place where there is often food around in the staff room such as cakes and cookies. Or not reading the ingredients when grocery shopping. Now I hope my improving health and weight loss will keep me motivated. I will be watching out for the next kickstart! As for food today, my usual fruit smoothie for breakfast with apple, banana, strawberries, blueberries and rice milk. wholemeal grain bread with lentel dahl for lunch Stir fry vegetables with tofu and rice for dinner.
