HI,
I have never tried Kale before. I saw it yesterday at the store. it looked fresh & green and a big bunch was only .99.. so i bought it..

now i am wondering a few things..
i am considering putting it in my minestrone soup. Does it discenagrate like spinach?

I have read on other threads that it is somewhat bitter... if i put it in the soup and i think it is bitter.. is there a way to fix the soup?

Are there some spices that taste better than others with kale? I am assuming since it is a heavier flavor then i can use stronger spices? cayanne? red curry? or just stick with the normal italian? I am using kitchen basics vegetable broth.

ps.. just a little funny.. we have a coast guard chef staying with us...i asked him if he uses kale for cooking.. he said "just for decoration" Rolling Eyes

Personally I love the flavor & eat it raw only. But I also cut the main stem off where it gets thin.(almost middle of leaf) You could also do is eat leaves only. But I cant help ya on flavoring sorry.

Kale is fantastic in soup! I dice it fine and add it about 10 minutes before serving to wilt it down a bit. It does not disintegrate as much as spinach so you get some chewiness, which I like.

It has never made a soup bitter, in my experience. If you eat it plain, steamed or raw in salad, I find it helpful to add lemon juice to sweeten the taste.

Kale is nature's perfect food. I just feel so healthy after I eat it. I've never noticed the bitterness that the others have mentioned, but I do usually buy lacinato kale, so maybe the taste has something to do with the variety?

A friend recently sent me a link for a recipe for "Tuscan Kale Chips." Sounds scrumptious, but I haven't yet tried it myself. http://fairfieldgreenfoodguide.com/tag/lacinato-kale/

I think kale tastes a lot like collards, and they aren't bitter like turnips. I eat kale raw in salads and sandwiches, but I also cook it. I've only tried quick sauteing with tomatoes etc. I think it'd be great in a soup.

I love kale, and eat it almost daily. The most common way is sauteed in water and aminos/soy sauce with onion powder. I am cooking some up now that I will mix with some curried cauliflower (post punk kitchen 3-seed cauliflower). I also used some this week in a lentil soup. It has a milder flavor than spinach, and a better texture (doesn't get mushy). I used to just get the lacinato, but I discovered that red and the basic curly green are good too.

Thank you for your responses! I put it in the soup. I have to say i am so glad i tried it. I LOVE it. I might have left the pieces a bit too large.. but I love the fact it is chewy! YUM.. and no bitter taste at all.. Honey likes it too.
So i am making some Whole Wheat Sour Soy Biscuits to go with it.. I can't wait!.. well actually i didn't wait.. i had some soup.. will have more and a biscuit for dinner.
I wound up using the 7 bean mixture, kitchen basics veggie stock, barley, carrots, onion, celery, frozen corn, frozen green beans, 1 small zucchini, and a bunch of kale. I got stoup.. a very hearty soup.

i am going to try one of the nutrion md recipes with the rest of the kale.. braised kale.. just to check it out.

I first got some kale in an organic produce box a few months ago and I wan't sure what to do with it. I'm not so fond of it cooked yet but I LOVE LOVE kale chips... it really satisfies the desire for potato chips because it has that crunch. I just take kale, cut out the stems tear into bite size pieces, lay out on a baking sheet, spritz with olive oil (one of those pumping oil pressure sprayers), season as desired, bake on 350 for about 10 minutes... getting the timing right is a fine art but 10 is my sweet zone in my oven... let coolif I wait tht long and presto... one of my new favorite snacks

When I first tried kale it was raw, cut up in a salad. I wasn't crazy about it. But since then I have used it in soups, stews, smoothies and it works well. Of course in smoothies it's raw, but has lots of other things mixed in. I've heard awesome things about the kale chips but haven't tried them yet.

I actually have cravings for this- cut your kale off the big stem and chop into small pieces- thinly slice a sweet onion and saute in a little olive oil until very tender and slightly caramalized- add kale and saute, stirring for a few minutes until tender- top with a sprinkle of sea salt, fresh gr. pepper and balsamic vinegar, cover, turn off heat, and let steam for a few mins and flavors to meld.

My favorite way to make kale is to make kale "chips". Tear the leaves off into bite size pieces and toss with a tiny bit of olive oil - use your fingers to spread it around evenly on all the leaves. Sprinkle with a little bit of kosher salt and spread evenly on a baking sheet. Bake for about 8-10 minutes at 350 until they are crispy. They get crunchy and salt and delicious - a better version of potato chips!!! Trust me, it doesn't look like it - but they crunch and practically dissolve in your mouth.

You can experiment with seasonings too, maybe some garlic powder, nutritional yeast, crushed red pepper - whatever you like.

All my salads start with a base of kale and spinach. LOVE the stuff! Sometimes I add it during the last few minutes of a stir fry or soup. Now if I could just sneak a piece of collard or mustard greens at the market, I might try those, too, just don't want to buy a bunch of something I can't test first! Love at first bite with kale!

There's no need to be afraid of kale or collard greens - they're 2 of my favorite foods actually!

Both Kale & Collards are delicious in smoothies - I hardly even notice they're there. Plus, there in the most powerful vegetable family of cancer fighters: the Cruciferous family.

My favorite way to have kale is to first carmelize some sliced yellow onion, then add a little bit of broth and let the kale steam for a few minutes. This is delicious served over cheezzzy grits (polenta) - that recipe is also on the site above.
