What is your food today Sun Jan 16?

Hi all.. today i am making curried culliflower.. and will pair that up with spicy thai soup... Lots of yesterdays soup is in the freezer.. looks like next week is a soup week. oh well, they are so different it will be fine. b-cereal l-soup d-rips burritos.. yumm.. snack.. nocho moms queso and chips/tortillas.. football is on...

I love curried cauliflower. I ate leftover curried cauliflower with peas and potatoes much of this last week. Yum! I hope you enjoy it. B: home fries with spinach and zucchini. Sort of a blending of the recommended recipe of the day. Plus a banana. L: leftover Mac Daddy (mac & not cheese from Veganomnicon) with steamed snap peas, D: Creamy polenta topped with spicy marinara, slow cooked on the stove most of this afternoon, plus veggies and kidney beans. For snacks I will just have to see what mood hits. I usually have some sort of fruit, or on weekends a small smoothie. Sometimes I make some air popped popcorn. Often I nibble on leftovers.

Cynthia I'm confused. Is this thread for our menu on Sunday 16th or Saturday 15th. The title says Sunday 15th. I know that when I had breakfast this morning it was still Saturday in America, so I guess my menu spans both days anyway. Here it is: Breakfast: Apple Cinnamon Oatmeal + wholemeal toast w/strawberry (all-fruit) jam. Lunch: Hoppin John Salad + fruit smoothie. Snack: Air-popped popcorn Dinner: Hummus with pitta bread, then Black bean Chilli and brown rice for main course, then Chocolate Raspberry Mouse for dessert. BW Theodore

Here's a good place to confess about what I ate yesterday. Fell off the wagon. Plop! My 80-something neighbor, for whom I've done small favors, brought me two big pieces of cake hot out of the oven. I was already in a bad mood about the scores my meter was giving me, so I said what the **** I'll stuff myself today. Ate pizza, both pieces of cake, and a huge bowl of "ice cream" (non dairy) for bedtime snack. Plan to crawl back on the wagon today.

Cch, that is not at all my recipe (mine is more of a stew) but it sounds excellent! I am definitely adding that to my list to try. My recipe is a throw together one-pot thing. One lg can stewed tomatoes. Cut up into pieces One bag frozen cauliflower One half bag frozen peas Diced onion if you like One lg russet potato, diced Garlic and onion powder, about 1 to 2 tsp each Or use real garlic and onion if you like. Curry powder, to taste, Salt and pepper to taste Cook until hot, serve over rice (or any grain you like) or pasta, or a baked potato.

it turned out that i made the red pepper hummus from nutrition md.. it was just fine the way it is.. at least as good, if not better than the stores. i made the roasted curried culiflower from the link i posted.. also very good... i used a pump spray olive oil; so not much at all. then i made my own version of cream of broccoli soup.. washed & cut up 3 med potatoes with skin on washed and sliced 3 ribs of celery .. boiled that in 2 cups of water...for about 10 min till potato was fork tender. then i used my hand stick blender to pulverize this to a nice smooth consistancy. then i added 3 cups rice milk, 1 1/2 tsp Basil, 1/2 tsp tarragon, 1/2 tsp salt (optional) 1/4 tsp white pepper and 8 cups broccoli florets. bring to boil over med heat, stiring every once in a while and then boil till broccoli is barely fork tender. bring out the stick blender.. hit it a few times..leave lots of chunks... taste.. yum.. you can stop right there or add 2tbsp tahani & 2-3 tbsp nutrional yeast. These two ingredients are to taste. I didn't want them to overpower anything. Stir in and serve.. delicious! one note.. next time with the potatoes i might throw in a can of drained chickpeas.. little more bulk and well more protein. the soup is good with out it..

All these soup recipes sound so good, and I'm looking forward to them when I get my stove fixed. B: orange; toasted bagel thin with vegan jack cheese, lettuce, tomato, onion, mustard, avocado L: green salad, mug of black bean soup D: will be vegetable fried rice in my wok (getting tired of deep fat cooking!)

Breakfast: Leftover Kickstart Banana Oat French Toast drizzled with maple syrup Snack: orange, raisins Lunch: quesadillas to go, vegetable soup Dinner: Easy Veggie Fajitas Dessert: Kickstart Chocolate Banana Smoothie - wow....delicious!

@pam.. what's going on with your stove/oven? the whole thing or just the oven? one of my favorites is that confetti couscous.. i could eat that a few days if i had to.. also do you have a slow cooker or microwave..? cynthia

I had company this evening and order pizzas. The pizza is in my fridge and everyone ate my vegetarian chile and corn bread. Great time and it was a good meal with veggies and baked chips and salsa for snacking. B: oatmeal w/applesauce L: ??? I forget D: Chili w/cornbread S: chips w/ salsa
