Oh yeah.... I have an amazing vegan tiramisu cupcake recipe so if any one is interested let me know and I'll post it!! Even my skeptical non vegan friends loved them

Ummm.....YEAH!

It's always fun to make something vegan and then watch your carnivore friends devour it and say, "It's WHAT?" "REALLY"? Smile I was assigned a dessert for a party next week so I'd love to hear more!

I made the Golden Vanilla cupcakes from the "Vegan Cupcakes Take Over the World" cookbook for a party last week. EVERYONE ate them up and couldn't stop saying how delicious and moist they were. They are now my go-to cupcake recipe forever!

Cupcakes:

1 cup soy milk
1 tsp apple cider vinegar
1 1/4 cups all purpose flour
2 tbs cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt (increase salt to 1/2 tsp if you are using oil instead of margarine
1/2 cup non-hydrogenated margarine softened or 1/3 cup canola oil
3/4 cup granulated sugar
2 tsp vanilla extract
1/4 tsp almond, caramel, or more vanilla extract

Directions:
1.Preheat oven to 350 and line muffin pan with cupcake liners
2.Whisk together the soy milk and vinegar and set aside to get good and curdled
3.If using margarine: sift the flour cornstarch, baking powder and baking soda into a large bowl and mix
4.in separate lg bowl, use a mixer at med. speed and cream marg. and sugar for 2 min. Beat in in the vanilla and other extract, if using, then alternate beating in the soy milk mixture and dry ingredients
5.if using oil beat together the soy milk mixture, oil ,sugar, vanilla, and other extracts. Sift in flour, cornstarch, baking powder, baking soda, and salt and mix until no lumps remain.
6. fill cupcake liner 2/3 of the way and bake for 20-22 min till done. transfer to cooling rack and let cool completely before frosting.

Vegan cream cheese frosting

1/4 cup non-hydrogenated margerine softened
1/4 cup vegan cream cheese, softened
2 cups confectioners' sugar
1 tsp vanilla extract

Directions:
1. Cream together margarine and cream cheese until just combined. use a mixer to whip while adding the confectioners sugar an 1/2 cup batches. Mix until smooth and creamy, then mix in vanilla. keep tightly covered and refrigerated until use.

1/3 cup espresso
1/3 cup kahula
1tbs cocoa powder
1/4 tsp. ground cinnamon
12 coffee beans

1. mix together the espresso ans the kahula.
2. use a paring knife to carve out a small cone in center of cupcake keep the chunk as intact as possible
3. our the kahula mixture in the cavity of the cupcake about 2 tbs. then scoop 2 tbs of the frosting into the cavity and smooth over with spoon dip the bottom of the cut out chunk in the kahula mixture but keep top part dry. place the cut out chunk on top of frosting and pat into place.
4. place the cocoa and cinnamon in sifter and dust all cupcakes. dollop a small amount of frosting on top and place a coffee bean on top. let sit for about 10 min and serve!

They sound good. I would have to substitute the flour for my gluten free flour. I don't drink so not sure what I could use for the alcohol.
Tiramisu used to be my favorite dessert.

XsickgirlX, WOW those sound wonderful! My brother's birthday is coming up in a couple of weeks so maybe I will talk him in to those (without, of course, revealing they are vegan!)

they are amazing and i used the oil version. and not using the alcohol is totally workable.

I just made these cupcakes with modifications:

I used almond milk and didn't sift the dry ingredients because I don't have a sifter. For the icing, I used the vegan cream cheese, vegan butter, powdered sugar, vanilla paste, and cocoa powder.

My non-vegan friend loved them and seeing if my guy-friend likes them too, even though he is skeptical.

I will definitely use these for my social on my hall next week with some yummy mocktails!
