What is your food today Mon Jan 17th?

ta da.. i am looking at the newspaper... made sure to get the date right!!

Yesterday i made rip esselstyn's burritos.. they were so good I am planning on making more of them today.. which means i have to go get more whole wheat burritos. Also since i bought veggies for it.. i had better make one more soup.. the spicy thai... over bought for soup recipes this week.. good thing they freeze so well.

This past weekend I made two soups..(minestrone & creamy broccoli) i froze a bunch in baggies to take to work this next week. I also still have a couple of black bean patties frozen... so it looks like left overs for the week...yummmy tho..

good thing this is all done.. caus it supposed to SNOW yet again.. make it stop!! UNCLE...

l: ebony and ivory soup (black beans, navy beans, onion, tomato, seasonings - yummy!) with tossed salad
d: not sure, maybe black bean patties and salad
snack: apple

I find that if I time it right, I'm not needing a morning snack as much as I used to, which is interesting.

Oh, and hubby invented something this weekend that was awesome! It looks and tastes a lot like tuna salad but it's not - it's chickpeas and navy beans, chopped coarsely with diced onion and celery. It also had mayo (it was for a social gathering, not just for us). Delish! What he's thinking for next time (for us) is to basically puree the navy beans down with a small amount of vinegar and agave (and maybe a drizzle of oil if needed for texture) into something akin to mayo and then add that to the chickpeas and veggies. Served on a nice hearty pumpernickel, yum!

Good morning! MLK holiday today, so I am home puttering around until going out to lunch with a friend. I am trying my hand at making seitan for the first time today. I seems pretty easy ... I am not sure why I was scared to try. I will let you all know how it works out. I am thinking BBQ seitan sammy's with cabbage slaw tomorrow or later this week.

B: oatmeal with brown sugar, cinnamon, diced apple and raisins. I was up to work out and ate super early.

S: Hungry by 9am so having aMcDougall cup of soup. Hot sour ramen.

L: going out to Mongolian grill for lunch. Lots of veggies with the schezuan sauce, tofu, rice or tortillas.

My parents are coming to visit for a couple of nights today. For dinner I found a recipe from fat free vegan.

D: asparagus and Chickpea Casserole.

HI pippin.. please do keep us posted on how that seitan comes out.. the mongolian grill around here doesn't have tofu for the grill .. even tho they put it in soup... i asked.. they said no.. how disappointing.
my mom is coming to dinner tonight.. it's rips burritos for us.. i am looking forward to sharing that recipe..yumm..

I think dinner is going to be whole wheat rotini with cheez sauce and veggies and a tossed salad. We toss the pasta and random frozen veggie into the boiling water and cook it up al dente, drain, add the sauce and have a one pot pasta casserole type dish. Sometimes, if we're feeling "fancy" it'll go from there into an actual casserole dish and get a topping of bread crumbs and get baked a little until the topping is crispy.

I've gotta say that over the weekend, I was looking for a snack and ended up with...a tossed salad! Something is definitely different if I'm actually craving/looking for all the dark leafies and feel like something is missing if I don't get enough!

Seitan report: well, it doesn't look pretty (lumps of randomly loaf shaped brown) but it tastes good. And when sliced into thin slices, it will look fine. I used the basic seitan recipe from Veganomicon. As suggested in the recipe, I stored it in a tightly covered container in the cooking broth.

I am thinking BBQ Seitan sammy's tomorrow night, with cabbage slaw and sweet potato fries. My parents should enjoy it. They are troopers and always tell their friends how much they enjoy my meals, even if they are vegetarian. Very Happy

Hu Hot Mongolian BBQ report. Oh, so good! I chose schezuan sauce because it is fat free and low in calories. They have fresh tofu, and lots of veggies. Too bad they don't serve brown rice. Maybe I will put in a request. They cleaned the grill thoroughly for me to get rid of any meat residue I probably ate too much, but what the hay. It was 90% veggies.

Tonight I made the Spicy Thai Soup off the menu plan. OMG! AMAZING! You have to try it if you haven't already. At only 59 calories a cup I wasn't expecting something so flavorful. Definitely add ingredients to your shopping list and make it.

Breakfast: burrito using leftover tofu scramble
Snack: banana
Lunch: leftover spicy butternut squash soup, slice of pumpernickel with garlic hummus
Snack: veggie chips
Dinner: Spicy Thai Soup with a small baked potato with earth balance, pepper and nutritional yeast.

Today's menu:

B 1 orange, cereal w. almond milk, raspberries, and peaches

L black bean soup, bagel thin sandwich w. vegan cheese, tomatoes, onions, pickles

D leftover veggie fried rice, salad, vegan ribs/bbq sauce

S frozen fruit bar, handful of pretzels

I don't have much appetite today, but I caught the kids cold and as night is approaching I am getting seriously stuffed up. Woke up this morning with a sore throat, but pulled on my sweats and took my first low impact aerobics class Smile

B: oatmeal
L: vegetarian chili and corn bread (leftover)
D: boca burger and string beans
S: chips w/salsa and no cheese

Hi V..
Isn't it great to work out hard and really sweat when you are stuffed up? seriously.. as long as i am not achy and sick, i really love it..
I think of it as war..and i get to win.. while on the treadmill or other.. i am thinking that i am forcing my body to work the way it is supposed to.. get the engine fine tuned.. and i think "the stuffyness can't hold with this!" a good hard sweat is a great way to unblock!
since i can't do that every few hours..after that it's a nettie pot... and maybe some cold meds if desparate.. till the next workout.
