Easy Lentil Spinach Soup ....I made last night

Hi Everyone, I was cleaning out the refrigerator yesterday & thought I'd make some soups for dinner. Had leftover smoked turkey frozen, so decided to use that in some homemade pinto beans for my non-veg husband. Wanted to make some Lentil Soup for myself. Mine was done first & I had him taste the Lentil Soup. After tasting my Lentil Soup, my husband ended up eating two cupfuls before he had his own Pinto Bean Soup. Had to write the recipe down right away, so I didn't forget what I put in it. Here's the recipe: Easy Lentil Spinach Soup 2 cups of vegetable broth water as needed during cooking 1 1/2 cups of brown lentils 1/2 cup chopped onion 1/3 cup chopped carrot 1/3 cup chopped celery 2 large handfuls of fresh spinach (rinsed & chopped) 1/4 tsp. of ground thyme 1/4 tsp. of garlic powder 2 small bay leaves Sea salt to taste Rinse lentils, put into a medium saucepan. Add chopped onion, carrot, celery & vegetable broth. Bring to a boil; turn down to a simmer. Add thyme, garlic powder & bay leaves. Cook for 1- 1 1/2 hrs, adding water as needed until lentils are fully cooked & desired thickness. Remove bay leaves. Add chopped fresh spinach to soup and continue to simmer until spinach is cooked. Taste & add a pinch of sea salt if needed. Makes 3-4 servings Enjoy!
