You eat until you are satisfied - pay attention to how you feel, do you feel full/satisfied? Most people don't think about that, they just eat and eat and eat ... until the food is gone or they're just busting OR they reach some value that someone else said they "should" eat. If you're eating whole grains, fruits, veggies, legumes, you'll be full a lot sooner - take your time and just eat what you need to eat.

DIY do it yourself - instead of giving recipes or specific foods, this is where you get to put into practice what you're learning to build your own meals. You might decide that you'd like to try using spinach in place of kale and maybe some different seasonings for something - make your own spicy rice dish instead of the Asian inspired rice dish from the previous day or whatever. This is to help so that once the 21 days are over, you can have the tools to continue vegan eating on your own, without having to have someone giving recipes every day. A lot of the recipes from the Sept kickstart, we still use, but we also have varied them, mixed and matched ingredients to get new things, and so on.

Deb, you did a great job answering. I'd like to suggest requesting some vegan cookbooks from your local library, or browsing the web and looking at some vegan blogs for ideas.

I think that's one of the best things about the kickstart. Many plans will show you how to lose weight (for instance) and a lot of people will lose weight on their plan. But, once the plan is over, they're back where they started pretty much - the way they eat hasn't changed, they've just accepted, for a time, that someone else is allowed to tell them how much and when to eat. The kickstart is designed to prepare you to eat in a healthy manner for the rest of your life, eating the foods that you like, that make you feel healthy and light - if you don't like swiss chard and bok choy because the flavors are too strong, use spinach or kale instead.
