Yikes! We're almost through!!

...and then what!! We're almost to 21 days. I have only been able to do this by following the menu. I have rarely deviated from it - follow it to the letter (well except if it had a tofu, tempheh or eggplant dish - yuck, can't do those yet). But left on my own makes me very nervous. Maybe just start over from day 1?? What's everyone else going to do. Maybe I'll look for another xx number of day challenge somewhere. Yes, I do need to be guided!

I didn't realize this challenge was over on Sunday! I too would love to join another challenge so I will be watching this post for information. My reasons aren't so much about the food, just the support and "challenge" itself. Gives me motivation to continue and learn. Dee

donnamae and Dee- This is my first Kickstart but it looks like they have one every few months. Isn't the board still active in between? Dr. Barnard's 21-Day Weight Loss Kickstart Book has more recipes, as well as NutritionMD.org. I've found many good recipes in the Engine 2 book and Dr. Esselstyn's Prevent & Reverse Heart Disease. Yes the forum remains open between kickstarts so those who want to can still come here and ask questions and/or support each other. Its quieter between kickstarts in that there are not as many people participating but a few of us continue to check in (or at least thats been my experience during the past 2 kickstarts). As for branching out on your own - start over if needs be, no harm there. Use the kickstart book and associated food diary to help you keep track. I would also suggest investing in a good vegan recipe book or two (see the post on books for some recommended by kickstarters) and start to experiment with making some additional recipes to broaden your meal plans. You will be doing this all by yourself before you know it. And you really wont be by yourself if you continue to visit the forum.

My first kickstart was this past April. I found that only about half of the recipes stayed in my life but I added a lot more afterward, mostly from the affiliated site http://www.nutritionmd.com. Lots and lots of recipes to choose from there, and you can depend on all of them being in line with the PCRM principals. I also stayed on the forum. It gets a bit quite, but if you ask a question you will stir up responses. The forum also got active again a few weeks before this kickstart. - madeline

Make yourself something akin to a color wheel (like for matching paint). Y'know how they have multiple wheels and you set one then rotate the other to find a good combo? Put beans/legumes on one wheel (black, white, chickpeas, lentils, etc); put grains on another (quinoa, brown rice, etc); put greens on a third (spinach, tossed salad, kale, chard, bok choy, etc) Then just spin the wheels and see where they land and that's dinner. It's basically a moving Power Plate. Definitely get a good cookbook (or two) and bookmark nutritionmd and such. Think about the recipes you really love - what ingredients do they use? Then look for other recipes that start with one of those - for example, quinoa is a staple in our house now. The other day, I found a recipe for quinoa "meatloaf" that looks yummy so that goes onto the menu for the next couple weeks somewhere. We'll see if we like it, if we can tweak it, or if it's just not something we want to do again (sometimes the texture is off, sometimes the work involved is a pain, etc). Kind of like Tarzan swinging from tree to tree on vines, you can swing from recipe to recipe by working through common ingredients. --Deb R

thank you so much everyone for the suggestions. I do have some good cookbooks that I've gathered so will look through those and come up with a plan. I do see the types of things that 'set' well with me versus the ones that I gag down (few and far between but I 'know' what they are!!). I'm also getting more experimental with things and figuring out some things on my own. For instance a chili soup that I made was not that great by itself, but if I put some rice with it, it becomes so much more tastier and easier for me to digest. Thanks again -
