what is your food today Tues Jan 18th?

ok it's snowing again.. and if that is not enough we are supposed to get sleet and freezing rain!! I have lots to do today besides shoveling.. b-cereal l-soup d-left over rips or a bean patty and finish up soup. snack... bannana, apple i saw in another thread you were trying to make seitan.. I found an interesting blog for that..she makes chicken fried steak that non-vegans argue that it is not chicken. I don't make fried anything.. i have not looked real close to see how much oil is used.. i am not really considering making it... but the picture looks good. What i am going to make is that spicy thai soup when i get home from work either today or tomorrow. I can't wait after Lisa's thumbs up! I am new to this forum. I have been a vegan for about 25 plus years. My food of the day and every day if I can- BLUEBERRIES! Blueberries contain anthocyanin, an anti-inflammatory. This compound keeps your blood flowing smoothly, so it prevents hardening in the arteries. Blueberries also keep your arteries from constricting in response to stress. When stress causes constriction of the arteries high blood pressure can follow as a result and cause cardiovascular disease, which is the leading cause of death in the US. Your arteries relax because blueberries increase the availability of nitric oxide, which is known to be an artery relaxer. I am encouraged by my seitan experiment. Butmthe test will be tonight when I make BBQ seitan burgers for myself and my visiting parents. B: oatmeal with banana and blueberries (frozen) L: Baked potato with steamed veggies. Maybe a small salad if I feel like taking a walk. D: BBQ seitan slices on whole wheat buns, red cabbage slaw and sweet potato fried (oil free). S: maybe an apple and popcorn.

I've come down with a really bad illness. It's either the flu or strep throat, I'm not sure. I avoid taking medicine at all costs normally and I'm especially hesitant now that I'm 7 & 1/2 months pregnant. So I've been suffering through it and that has made my appetite quite a bit smaller. For breakfast I wanted something hot and soothing for my throat so I chose to make an organic buckwheat hot cereal. It's my new favorite! Whether you have a gluten allergy/sensitivity/celiac or if you like hot cereal for breakfast, I highly recommend you try it. I put raspberries, blueberries, and blackberries in mine with some stevia and brown rice protein powder. I'm not sure what I'll be eating the rest of the day I'll just have to wait and see what sounds good to me, if anything does.

Really tough day today, but Tuesdays and Wednesdays are always a challenge dealing with grading a lot of papers and snippy students who won't take responsibility for their work when they can play the "blame the teacher"(ME!) game. Morning: smoothie with light soy milk, banana, carob powder, flaxseeds, date, honey, and ice Mid-Morning: 2 slices bread with honey and drizzle of sesame seed paste Afternoon: Italian stew (mixed veggies, tomato sauce, beans, and fresh Italian herbs) over barley Evening: salad with beans and balsamic vinegar and lemon juice; mashed sweet potato (running out of potatoes) Snack: whole grain pretzels and dried fruit Djuna

Snow day today, so I have lots of time to cook (if I don't lose power.) Had a fabulous berry smoothie for breakfast with my new Magic Bullet. For lunch, I made the spicy thai soup. I love it. I think in the future, I'd love to throw a couple of croutons on the top as a garnish. Haven't thought about dinner yet, but I was thinking of making that firefighter's recipe for veg wrap. It looks delicious.

I wasn't feeling well all weekend so I tried to eat anything there was (vegan or not) that didn't make me sick...trying to get back on track today B: cereal w/almond milk L: leftover pasta D: probably brown rice with veggies

Probably spaghetti, with a prepared sauce to which I add stuff, like mushrooms, onions, green peppers. The sauce is Prego "Chunky Garden Combo." One half cup has only 1.5 grams of fat.

Boy, do I have a whopper (vegan of course) of a cold. I can't breathe! B: Oatmeal L: Vege Chili & cornbread S: Hot air popcorn D: Spicy Thai Soup - I didn't care for it too much it was missing something - I needed to add salt. Maybe I did something wrong.

So i tried the spicy soup today.. since most people loved it...i doubled the batch.. used up all my mushrooms, and the rest of my broccoli.. i like it .. it's different.. to me it's not real spicy.. and i grated my own ginger.. but i can see where other people would think it is spicy.. it turned out that i had oatmeal w/blueberries for breakfast.. lunch--2 bowls of spicy thai soup for lunch w/chips dinner.. rips burrito & a bean pattie with nacho mom's queso.. and a couple pieces of vegan dark chocolate for dessert... i had to shovel every 2 hours today... lots of snow.

Well my illness has stuck with me throughout the day but I have managed to eat. I made a smoothie with Garden of Life's perfect food raw as well as Emergen-C. I also ate a plain baked potato, carrots with hummus, and a brown rice cake with almond butter (spread through the day not all at the same time). I've tried to keep fluids in me as well I don't need to get dehydrated to make matters worse! I see the doctor tomorrow hopefully he can tell me what's wrong.

Seitan report (for those who care) BBQ seitan sammys were a hit!! My parents loved them and said they would eat them again. I suppose it didn't hurt that I drenched the seitan slices in Sweet Baby Ray's BBQ sauce, the best bbq sauce on the planet. I paired the sammys with sweet potato fries (yummy) and cabbage slaw. Excellent.

LOL. I love this. Blueberries are probably one of my favorites too. I had some with breakfast this morning! I had some yummy food today: Took my daughter to lunch and I had veggie gyoza, and a tofu-avoc. roll.
For dinner I made a delicious veggie stir fry (asparagus, carrots, onion, portobello, gr pepper, eggplant, ginger/garlic) and served it over grilled polenta....so happy now!

well, didn't have the smoothie as a snack. Instead, I had about 1/2 cup of canteloupe chunks and then a cup of Bengal Spice tea - I was really wanting the tea late evening last night because it had been such a slushy day. While I was heating the water for tea, I asked if my guys wanted cocoa or tea or whatever warm. We have a small assortment of cocoas that were in a grab bag gift. Had to check to see if any contained coffee (not good for hubby) and in the process of reading the ingredients, DS (12 yrs old) decided he really didn't want any of them (huge lists of ingredients for something simple as cocoa, partially hydrogenated fats, etc). I showed him my "secret recipe" for homemade hot cocoa and he was happy with that - now he can make his own whenever he wants (he uses vanilla almond milk for his, I use the unsweetened plain almond milk for mine, he uses a splash of raspberry extract, I prefer mint for mine). --Deb R

Splash of vanilla is standard, other flavors are optional. on the kahlua idea but we try to avoid alcohol most of the time, for various reasons. If I were to make it an "adult" beverage, I'd probably use peppermint schnapps. --Deb R

Thanks Deb.. yeah i am all talk on the booze too.. quite a light weight actually. I mostly skip it cause it's not any fun. I pass out.. I miss all the fun... then I don't sleep well.. I either toss and turn or wake up for an hour or so in the middle of the night.... always don't feel top of the morning the next day... so what's the point? also doesn't help with weight loss. cynthia

Cynthia- wise words! I know what you're saying about alcohol. It's double-edged sword, isn't it? So relaxing, but yet so potentially disruptive. I know for a fact that I would be losing more weight if I completely eliminated it! Thanks for posting that. Pam
