RE: Making Seitan

I too have been making Seitan. I have only made it using the gluten. I may have to look into the delectable planet video just to see, but that's a long process, lots of rinsing, etc., right? Anyway, I have tried a few recipes using the simmer method, but a week ago I tried a baked seitan. It was in the vegan on the cheap cookbook and it actually had a can of beans in it also that you blend first in the food processor. It came out more like meat, denser and not sponge. I really liked it. I also made the seitan in Dr. Barnard's 21 day kickstart book that was for BBQ sandwiches but I just did the seitan part. I mixed it and baked it. It was denser and not spongy also, but it had a crust so I wouuld definitely wrap it up when baking. The one from vegan on the cheap was wrapped in foil and baked in a pan filled with an inch of water. Either one were good. There was also a suggestion of Bryanne clark grogan which looked good but I haven't tried that one yet. THere is another post about seitan in this forum you could look for also.
