Making Seitan

Today I made seitan from whole wheat flour following the instructions from a Delectable Planet video. I used some of the seitan in Dr. Esselstyn's Seitan Bourguignon recipe, which was good. I was happy with the results of making seitan for the first time but maybe next time I'll try making it from wheat gluten to save time. My seitan could have been a little firmer. Any suggestions?

I too have been making Seitan. I have only made it using the gluten. I may have to look into the delectable planet video just to see, but that's a long process, lots of rinsing, etc., right?

Anyway, I have tried a few recipes using the simmer method, but a week ago I tried a baked seitan. It was in the vegan on the cheap cookbook and it actually had a can of beans in it also that you blend first in the food processor. It came out more like meat, denser and not sponge. I really liked it.

I also made the seitan in Dr. Barnard's 21 day kickstart book that was for BBQ sandwiches but I just did the seitan part. I mixed it and baked it. It was denser and not spongy also, but it had a crust so I wouuld definitely wrap it up when baking. The one from vegan on the cheap was wrapped in foil and baked in a pan filled with an inch of water. Either one were good.

There was also a suggestion of Bryanne clark grogan which looked good but I haven't tried that one yet. THere is another post about seitan in this forum you could look for also.
