Thoughts on Todays Message Glycemic Index
Posted Tuesday, January 18, 2011 at 8:30 AM
Wow, I really liked todays message on eating low glycemic index foods. Now I understand why I'm choosing what I am. (Like avoiding the white flour and white potatoes etc.) Also, the change in my energy levels has become so clear. I know I used to sedate myself with sugar and white flour foods, especially in the evening. I believe I was using it as a 'sleeping pill'. I am not sure why I was doing this, but I do know I have no sugar or white flour cravings and I feel so much better. How about you?

That's the first rule of thumb I learned 5 years ago as a newly-diagnosed diabetic: if it's white, don't bite. White flour, sugar, rice, potato... Actually, in the last week I've started craving salads, leafy greens and such. If I don't get a salad in at least once a day, I feel like something's missing. Saturday, I actually grabbed a salad as a late-evening snack. I've gotten in the habit of keeping sliced cukes, sliced mushrooms, whatever else, plus the pre-washed organic salad mix and baby spinach and grape or cherry tomatoes on hand. I can toss a salad together in a bowl in a flash without lots of prep time (a little prep ahead of time to slice the cukes and such). It's working great - and even hubby and son are starting to do quick salads with their meals as well. --Deb R

But you know, this is the sort of advice that is so confusing to me. If you read Dr. McDougall's books and website, he advocates eating things like potatoes, and he has a very interesting article on line about the Glycemic Index. I'm all for not eating white rice, white pasta, and white bread, but potatoes are a very nutritious food until you top them with cheese, sour cream, etc. Here's a link to Dr. McDougall's article: http://www.drmcdougall.com/misc/2006nl/july/glycemic.htm

If glucose is not an issue, they're great (except when all that stuff is piled on top) but for diabetics there is a very real issue there. Some diabetics can handle a small bit of white potato, others can't. As with anything, your meter is your best friend in finding out whether your body in your circumstances can handle it. --Deb R

So is the nutritional information on this forum geared specifically toward those with insulin resistance? I thought it was general information geared toward everyone, so I was confused. I posed the "potato" question to Jeff Novick, R.D., who answered me that the symptoms of insulin resistance will disappear once one has become well, and then one could safely consume potatoes. Since I do not have insulin resistance, I guess I can safely continue to eat potatoes. I am very much bothered by the demonization of potatoes ... and no, I do not come from Idaho nor am I a potato farmer!

Dr. Barnard, one of the founders of PCRM, has done a lot of research and work with diabetes and related issues (like insulin resistance) including a book about reversing diabetes. Potatoes are no more demons than a slice of wheat bread or a cube of tofu - but there are people who need to be cautious with potatoes just as there are people who need to be cautious with gluten containing foods or have clinical allergies to soy (a friend of mine would go into anaphylaxis if she ate tofu). --Deb R --Deb R
