day 1 what R U eating?

Hi All,
It is day one... Today i am eating rasin bread for pre-breakfast, then i worked out, then a bowl of cereal..
Lunch or dinner will be a budda's delight tofu and veggie soup w/ginger.
What are you eating? Are you making the menu items? Are they new to you? Did you like them? I really like couscous confetti .. everything is so colorful today! I am not a fan of soup puree,so i start with the carrots shredded, then cook it, then puree a small part. That way i have a slightly chunky soup...

I think I'm going to follow the Day 1 menu - oatmeal, couscous salad and hoppin john. I don't think I have any black-eyed peas though. Maybe I'll switch out another bean.
Off to take the dog for a walk!

Happy New Year everyone!

I'm having the oatmeal dish but I don't cook it with apple juice. After it's ready, I add 1/2 c unsweetened applesauce and I always mix my cinnamon with tumeric (1-to-1). You can't taste the tumeric but we all know it's a powerhouse spice, right! It does turn the oatmeal a strange colour but that's ok with me! I am also going to use up some dried blueberries and cranberries instead of raisins this morning.

Off for a 10 km walk this morning too, with lunch to follow so hopefully there will be appropriate choices! (a salad at least). I am taking some fruit and a small container of unsalted mixed nuts in my pocket just in case. I know I'll be starving after the trek.

Dinner: not sure yet.

All we are saying is "Give Peas a Chance"

Good morning cch22 and wormtowngirl! (where's wormtown?)

Brekkie: Steamy bowl of steel-cut oats with cranberry sauce (I make my own with cranberries, orange juice and dates - started at Christmas and just kept going!

Recipe: Sugar-free cranberry sauce with oj and dates

Lunch: Smokey Butternut Lentil Soup and tomato on whole-grain bread sandwich.

Soup recipe: Smokey butternut lentil soup

Dinner - ? as to the specifics, yet it's a usually a big pile of potatoes or sweet potatoes or brown rice or other whole grain and just as many steamed veggies and a salad. Works every time!

Hello everyone,

Glad to be back!

B- apple and 1 cup quinoa with a couple tablespoons of salsa on top.

S - Smoothie with blueberries, strawberries, pineapple, orange & almond milk (served 2)

L - steamed kale, green beans and broccoli with quinoa

D- 1/2 cup Aduki beans, 4 whole walnuts in shell (cracked), apple

S - air popped popcorn with a drizzle of meyer lemon extra virgin olive oil.

Had too much fruit today, but overall did good. Will watch portions tomorrow.

I got a new juicer for christmas so I am currently sipping on a large glass of carrot, apple and celery jiuce for breakfast. Yumm. I am going to include more vegetable juices to my diet.

As for the rest of the day I am not sure yet. Maybe a salad for lunch or a home-made burger.

To get the kickstart started I made a large vegetable cassarole yesterday so that I can have that a few times this week. I also used some of the pulp left from yesterdays juice (carrot, apple, beet), added black beans and other ingredients to make some vegan burger patties.

My christmas holiday break finishes tomorrow and back to work, so I wanted a few things in the house ready to go if I dont feel like cooking when I get home. I am also eating lots of kale from my garden as a great crop at present.

Breakfast: Oatmeal cooked in water. Sprinkled some cinnamon on top.
Lunch: Riced rutabaga and carrot.
Dinner: Hoppin John Salad and steamed kale.

Busy day for me and I needed a "portable" breakfast so

B- 1/2 banana, 1 slice whole-grain, seeded, no oil toast with a really tiny bit of vegan cr. cheese, and 1 veg. sausage patty.

no lunch

D- brn rice with blk-eyed peas, collard greens with vinegar, pickled beets, and 1 slice vegan lo-fat cornbread, green/herbal iced tea.

Will have some cantalope and blackberries later.

Breakfast: Smoothie with kale, collard greens, unsweetened almond milk, frozen blueberries, banana, raspberries, and mango, and 1 tablespoon of ground flaxseed;
Vit B12 and Vit D tablets

Snack: Fresh vegetable slices(red pepper, green onion, cucumbers) and cherry tomatoes; topped with a little bit of Aldi's mild salsa

Lunch: Carrot and Black Bean Soup I made this weekend.
An orange

Dinner: Hoppin' John Salad with NO olive oil;
a delicious filling baked potato sprinkled with nutritional yeast flakes only

I didn't follow the plan.

B: Gluten free oatmeal with 2/3 cup of soy milk, chopped dates. Yum
L: Smoothie with pumpkin spice soy "nog" a banana, and rice protein powder
Snack: Apple and some cashews
Dinner: Amy's bistro burger on a gluten free bun with lettuce. Some potatoes fried in coconut oil.

Lots of water
