Gluten Free Pasta Salad to take for my lunch

Going to the Annual Quilt Show tomorrow with some friends & we decided to bring our lunch. It's a large quilt show which gets very crowded and the food selection is minimal & expensive. I was trying to decide what I could bring?
While going through refrigerator & cupboard...I came up with a Gluten Free Pasta Salad. Ended up having some for dinner tonight & non-veg husband tried some too. He like it as well as I did.
Here's the recipe:
2-3 cups brown rice pasta ( I used Trader Joe's Fusilli, came out perfect and very tasty. I've noticed that brown rice pasta can get very mushy if overcooked, so keep rinsing a piece under cold water and tasting as you are cooking it. This was the best brown rice pasta I've tried)
Organic Garbanzo beans
Muir Glen Organic Diced tomatoes with Italian Herbs
Artichoke Hearts (drained & chopped)
Chopped black olives
Red onion (I omitted for my lunch tomorrow, since I will be in close quarters talking to people all day)
Cook pasta according to package directions, drain & rinse with cold water. Add veggies etc. according to your taste... you can judge how much as you add them.
You could add any other chopped veggies or beans that you like....broccoli, spinach, edamame, grated carrot, etc. I was cleaning out my frig...so I was just using up what I had on hand.
For dressing I used a little olive oil, vinegar & Italian herbs. There are a lot of fat free Italian dressings that would work good too.
I think this would be a good potluck dish, especially in warmer weather months.
Should be even tastier tomorrow after setting in the dressing over night. I have some gluten - free crackers and fruit that I will take to have with it.
Just thought I'd pass it along....especially when it passes the "non-veg husband" test!
