Post Kickstart Forum

Thought I would start a thread for those of us who would like to stay in touch once the kickstart is done. There are usually a dozen or so that continue to post after the kickstart ends. It helps keep everyone on track. Some of us have been around for a very long time !!

Great! I will be here too. I always check the forum. I haven't posted much this kickstart as it has been a crazy busy time - school starting, selling a house, building a house, and saying yes when the principal asked me to be treasurer of the pto (I think I had a moment of insanity cuz I have done it before 10 years ago)!

I'm definitely interested in staying in touch, because I learn alot from these exchanges in the forum. I found a recipe for a squash, zucchini, and white bean stew that I think is delicious and worth sharing. Can I post it here during the week? Irene

I was planning on checking in too but received the 21st day email stating "Beginning Friday, Sept. 30, the Kickstart site will be unavailable while we prepare for the January Kickstart." Doesn't that mean we can't use the forum?

For people who don't cook or just don't like to cook this is a great cookbook. ~~The McDougall Quick & Easy Cookbook – Over 300 Delicious Low-Fat Recipes You Can Prepare in Fifteen Minutes Or Less! I’ll give you an example from page 88 ~ ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ SPEEDY INTERNATIONAL STEW 2-14.5 ounce cans stewed tomatoes (Italian, Mexican or Cajun) 1-15 ounce can black beans, drained and rinsed 1-16 ounce can corn kernels, drained and rinsed Place all ingredients in a medium saucepan and cook over medium heat for 5 minutes, stirring occasionally. Recipe Hint: This three ingredient recipe is so simple you won’t believe it can be so good. Serve with a loaf of fresh bread and a simple green salad for a hearty, quick meal. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ It doesn’t get any easier than that. I still believe that the less we eat out of cans, the better, but - - - for those who have cooking issues this is a quick and easy way to have a fairly nutritious meal. Even for those of us who DO cook, this is a great last minute, “I don’t have time to cook” recipe. I made it and it was really good. I served the leftovers with some whole wheat elbow mac and it was even better, but then I'm a bit of a pasta addict!!

It's kinda like a recipe we've used for years (even before vegan): 1 can of diced tomatoes (plain or flavored, or tomato sauce, depending on what texture you like) 1 can of black beans (or pintos if you prefer, whatever's handy) 1 cup of cooked brown rice (or more - expand it to fit) Heat it all together and serve - that's usually enough for at least 4 servings That's the base - you can saute up some onions, bell peppers; throw in corn, broccoli, carrots, whatever veggies you've got on hand. We call it "rice-a-beanie" and lived on it many weeks when hubby was a full time student and I was working for just above minimum wage. --Deb R
