Planning ahead

I'm using up all my non-vegan foods in the house and as I'm replacing them, getting all vegan-friendly items. So no more dairy milk or cheese etc. I tried this last January but couldn't stay on the plan; hope to have more success this time around. I've bought Dr. Barnard's new cookbook and added it to my growing stash of vegan cookbooks. Tonight's dinner will be vegan ... something featuring eggplant, squash, and tomatoes from our garden.

I'm looking forward to the next kickstart too. I've been "mostly vegan" for the past 6 months, barring "accidental" things like eggs or dairy hidden in prepared foods and a few occasional bites of meat or fish. Eating lots of veggies has been pretty easy this summer with so much fresh produce around. I'm looking forward to getting more inspiration and guidance next month!

It just hit me – it's almost September! Haha... I'm excited for this Kickstart. Can't believe I've been vegan since March. 6 months has flown by!

I just realized all the money I could potentially save by eating vegan, as long as I stay away from all my beloved "foodie" preferences and stick with basics.

I'm so excited. I was at a second hand book store and happened onto Dr. Bernard's book. I was fascinated. I started experimenting and got some more vegan books. It's difficult for me to get the fat content down enough sometimes. I'm still consuming too much. I need this.

I'm another Kickstart returnee! I participated in both the January and March Kickstarts...and am looking forward to more encouragement from participants. The last two Kickstarts were AWESOME! I've remained low-fat vegan this whole time (with occasional non-vegan accidents in other-prepared food)...and my health has improved DRAMATICALLY. I could never go back to SAD...I love feeling so healthy! Most dramatically, I've been able to lower my insulin by a full two-thirds: from 95 units to 30, and my neuropathy is improving. I can now walk and bike every day...and I do! BTW, I love cheeseless vegetable pizza (as an occasional treat) and butter-less popcorn...things I never thought I'd say! Looking forward to starting again with you all.
September Kickstart Goals: Walk/bike daily, keep up with forum, 100% low-fat vegan experimenting with maximizing FLAVOR!

I have been poring through various vegetarian/vegan cookbooks, websites, blogs, and guides. I also decided that I'm going to try going Vegan for the whole month of September (starting tomorrow)! I signed up for the March 2010 Kickstart, but I didn't end up doing it. Also, I think I signed up late because I never got the emails with the menus for Day 1 and Day 2. Does anyone know what these were? I know what the January menu was and I'd like the first 2 days of March so I can complete my archive. Since I'm eating vegan for all of September, rather than just the 21 days of the kick-start, I'm using the previous 2 menus to draw meal ideas from, which is why I'd like to complete the March menu. Anyway, can anyone help me with this?

Each 7-day menu will be "released" two days prior to its start date. So you will get the first menu this weekend. Does that make sense? Also, the menu from March is very similar to this one. Some things that will change are the periphery recipe recommendations by our celebrities.

I'm not going to follow the menu plans; I have found from experience that it's very frustrating for me to try to assemble everything to follow someone else's plan. I have plenty of vegan friendly foods in my house; I cook every night anyway, and it is almost always entirely vegetarian. I'll just do the necessary tweaking to make everything vegan. I probably have ten vegan cookbooks, including Dr. Barnard's and Dr. McDougall's; so I'm all set.

soon2BVeg - I am pretty much doing the same thing. Trying to finish up some things in the fridge so that they don't go bad. I made my last trip to Dunkin Donuts today...healthy breakfasts next week! Very excited. Also going on a Women's Weekend soon, they can promise vegetarian, but are sending me the menu in advance to see if vegan can be honored as well. LOVE that they are so willing to cater to everyone's food needs. Good luck!!

I started eating vegan in January after my husband was diagnosed with lung cancer. I had my own health issues and wanted to get healthy to be there for him. I read Dr. Barnard's reversing diabetes book and did pretty well until my husband's health deteriorated. He passed away on June 1 and all my good intentions went down the drain. I'm back for a new start on Sept. 6th and looking forward to getting my body cleansed from all the junk/processed food I've been eating.

We had a mishap with the coffeemaker this morning and I didn't get my morning cuppa. Tempted to stop at Dunkin' or Wawa but knew I'd never make it past the doughnuts, so had to wait until I got to work and get my blast of caffeine from the Kuerig machine instead.
