Yay for the kickstart

I have gone vegan many times (been vegetarian for 25 years - since i was 14) and this time I mostly followed the menu here and what a difference! For years I have eaten only whole wheat bread and pasta and always throw in beans, but I was using too much olive oil in everything, which my mother insisted was so good for me that I couldn't over do it! I also loved my chocolate and sugar. I would get very hungry and ended up grabbing things like potato chips or nachos with daiya at those times. Or I would have a craving for chocolate and make vegan cupcakes or brownies. No wonder I gained weight every time I went vegan! Now, I see things very differently. After coming here and signing up and following the menu plan and then watching Forks Over Knives, I decided 3 things. 1. I will always be vegan and never eat dairy again. 2. I will be as whole as possible Always. If I have cravings, I will make homemade, vegan cookies (or whatever) and keep the oil and sugar low and use whole grain flour and think 'nutrient rich' above all else. 3. I will eat as many vegetables and fruit as possible every day. More salads, more fresh fruit. I have lost 8 lbs and my husband has lost 10. We arent overweight, but a bit, um, soft My 17 year old son has been a whole food vegan for over a year and now I have to convert my 6 year old, cheese-loving daughter! The fact that my cravings are almost non existent is unbelievable! This diet works! I feel well fed, nourished, lighter and happier!
