Yay for the kickstart

I have gone vegan many times (been vegetarian for 25 years - since i was 14) and this time I mostly followed the menu here and what a difference!

For years I have eaten only whole wheat bread and pasta and always throw in beans, but I was using too much olive oil in everything, which my mother insisted was so good for me that I couldn't over do it! I also loved my chocolate and sugar.

I would get very hungry and ended up grabbing things like potato chips or nachos with daiya at those times. Or I would have a craving for chocolate and make vegan cupcakes or brownies. No wonder I gained weight every time I went vegan!

Now, I see things very differently. After coming here and signing up and following the menu plan and then watching Forks Over Knives, I decided 3 things.
1. I will always be vegan and never eat dairy again.
2. I will be as whole as possible Always. If I have cravings, I will make homemade, vegan cookies (or whatever) and keep the oil and sugar low and use whole grain flour and think 'nutrient rich' above all else.
3. I will eat as many vegetables and fruit as possible every day. More salads, more fresh fruit.

I have lost 8 lbs and my husband has lost 10. We arent overweight, but a bit, um, soft Smile My 17 year old son has been a whole food vegan for over a year and now I have to convert my 6 year old, cheese-loving daughter! The fact that my cravings are almost non existent is unbelievable! This diet works! I feel well fed, nourished, lighter and happier!

Just keep in mind that a 6 yr old will need more fat in her diet than you do. Doesn't need to be cheese for sure but there needs to be something that fills the nutritional 'space' that the cheese takes up. A growing young'un's needs are a bit different - and in another 4 or 5 yrs, she's going to again probably need to adjust as she hits puberty. Check out the links (off the main page somewhere here) to vegan nutrition for kids. You'll need to find alternatives for her BEFORE you take away the cheese. When there are things that are just as easy, tasty, and meeting physical needs as cheese, it won't be nearly as hard to transition as it would be if you took away cheese and expected an apple to fill the bill. For an adult, maybe; for a child, not as much. Things like nut butters (if there are no allergies) are one option, but there are others.

My son's doctor recommended a dairy-free diet my son. My main concern was macroni and cheese. After all what 7 year old kid doesn't live on mac 'n cheese?? Laughing I found a gluten-free, dairy-free mac 'n cheese recipe and made it with Daiya cheese. When he told me "Mommy, you need to make this ALL the time" I was a bit relieved. His doctor said not to use soy milk, soy cheese for the phytoestrogen reasons.

Lisasays: I agree with all of the above. that is how I have been as far as cravings. I have been vegan for about a year, vegetarian for a couple years before that and I guess flexitarian prior. Many times I have been an unhealthy vegan, eating the garbage, cookies chips, etc. I too have seen forks over knives and over time (like wild4stars says, My path is one of progress, not perfection) I will get to the point I am following your 3 steps you have written. #1 is easy, it's the #2 and 3 I have to get to without slipping back into the "simple carb trap".

It really helps to know I am not alone in this!!! I LOVE the support on this forum!!!

We make a not-cheese sauce from scratch (it uses cashew butter, nutritional yeast, and a few other bits) that is awesome on mac'n'cheese. It can go over any kind of pasta; works for nachos; makes a great baked potato topping (steamed broccoli, baked potato, cheese sauce YUM!); and even makes a decent alfredo-like sauce for a pasta primavera alfredo.
