ah - you lose me at the tofu (soy and I are not friends). I was hoping you'd found a vegan, non-soy filling option. We did find one recipe but hubby didn't like the texture of the ricotta-sub.
This recipe on the Fat Free Vegan website uses garbanzo beans instead of tofu.
