Daughter's Wedding Update

Here's a combined update on the emails I posted regarding my daughter's wedding. She's changed the reception menu from nibbly foods to a lasagne dinner. A friend who has an Italian/Greek restaurant is catering the reception. For the vegan/vegetarians, I'm making a spinach lasagne with gluten-free noodles (one lady needs gluten free foods). I can easily fit in my dress; apparently the problem was more that I was bloated than fat. Blame the beans and cruciferous vegetables!

The recipe is on pages 262-263 of Dr. Barnard's book "Food for Life". Tofu, mushrooms, carrots, onion...

ah - you lose me at the tofu (soy and I are not friends). I was hoping you'd found a vegan, non-soy filling option. We did find one recipe but hubby didn't like the texture of the ricotta-sub.

This recipe on the Fat Free Vegan website uses garbanzo beans instead of tofu.
