What is your food today Friday Jan 21st?

Hi All,
Has this thread given you inspiration to add new foods or cook the ones you make in a different way?? I hope so. I see we ran thru a few blueberries, pizza and buritos when we talked about them...

Pippin posted yesterday and i found myself making something similar for lunch..

b-oatmeal, banana, almond milk (out of soy)
l-a mixture of brown rice, greens, beans, diced tomatoes w/chilis (no hfcs or salt), and garlic.. yumm
d-honey is making speghetti.. green pepper, onion, mushrooms, vegan sausage, tomato sauce over whole wheat pasta w/a side salad.

after dinner I might do something with hot apples.. maybe an apple crisp... we are having company..

b: usual cereal and plant milk
l: mac and not-cheese and peas
s: apple, banana
d: unknown, could end up being leftovers depending on how DH feels after clearing the driveway this afternoon from this morning's snow

Will probably have chocolate pudding after dinner - DH found an amazing vegan chocolate pudding recipe online and instead of making 4 larger servings, he divided it into 9 tart-cup size servings, just enough to be a tasty snack.

well.. i wound up preparing lunch to take to work.. and it looked good.. so i ate it for breakfast too.. very colorful... green & red..

I'm looking forward to this weekend when DH will have time to shred up the cabbage, broccoli stems, carrots, and beets into a tasty slaw (and he's found a recipe for non-soy vegan mayo to use with it!) That'll probably be paired with black bean patties on fresh whole wheat bagels with organic agave sweetened ketchup and homemade bread and butter like pickles (a little more sour than that but not dill).

Hi Cynthia and all

For breakfast I had scrambled tofu on wholemeal toast.

Snack: 2 fairtrade cereal bars.

For lunch I had rice with vegetables and tofu from Wholefoods Market.

Snack: 2 more fairtrade cereal bars.

For dinner I'm gonna have split pea soup with tortilla wraps. Cherry flavour soy yoghurt for desert (large tub).

That's great! I eat lunch or dinner for breakfast regularly. Very Happy

Today,
B: oil free hash browns with spinach

s: probably an apple.

L: leftover "snap" meal (brown rice with stewed veggies ~ leftover from last night).

s: popcorn maybe? Or a banana. or both.

D: I am thinking burritos tonight. My fridge is end-of-the-week bare, so I'll use up the odds and ends before going shopping this weekend. I usually have black beans or fat free refried beans on hand, and I always have frozen peppers and onions in the freezer.

There have been some good ideas in this thread. One idea about curried cauliflower was the incentive for me to find a recipe similar to this to use up a big beautiful cauliflower that I had sitting in my fridge Smile.

Morning: Smoothie with frozen banana, light soy milk, carob powder, flaxseeds, date, honey, and ice
Mid-Morning: two slices whole grain bread with honey and a dribble of sesame seed paste.
Afternoon: Leftover Italian stew (see my previous posts) over brown rice
Evening: salad with ready-made BBQ seitan and mashed potatoes
Snacks: whole grain pretzels and dried fruit (a serving of each - I don't overdo it Smile)

I have to say that I think I've found heaven since finding this very simple single-serving recipe for mashed potatoes:

1 baked potato (I use red potatoes but you can also used sweet potato)
1 tbsp non-dairy milk (I use light soy milk)
1 tsp dijon mustard (I use a heaping, since I love mustard)
cayenne pepper

The mustard really gives the mashed potatoes a nice "kick". It's gotten me out of the habit of heaving on a lot of BBQ sauce or ketchup (loaded with sugar) on my potatoes Very Happy.

Pippin.. i love burritos w/hummus.. and all you really need is a can of chickpeas and the recipe on nutrionmd.. hummus gives it that little bit of gooey texture.. also found we like the burritos put in the oven for just a bit.. the crunch of the whole wheat buritto is yummy..

djuna.. sesame seed paste.. is that tahania? or something you make yourself?
also. potatoes must be one of those things like oatmeal that you can put anything in.. once.. i had something totally differnt and incrediably delious..
take vegan margarine and saute onion and chopped mint.. add that to mashed potatoes... if you like mint.. you would like this! way good.

Once again, I screwed up. Wanted to cook something in my new crock pot, but didn't get it ready in time. Instead, I'll have something already prepared and in the freezer, probably chili.

I love hummus on burritos too! Too bad my parents gobbled up all of my red pepper hummus this week. Rolling Eyes They loved it. I will make more this weekend. I think I am out of garbanzo beans.

I love putting them in the oven to crisp up. Whoever posted that recipe early on (I guess it was Rip's video recipe) was brilliant.

Brekkie: wholegrain blueberry pancakes with maple syrup!

Lunch: homemade carrot, kale, onion, split pea soup with a big avo/tomato sammy on wholegrain bread.

Dinner? Hmmmmmm....will report in later!

OK - back to report in!

Huge spinach/arugula salad with kidney beans, fat free viniagrette and nutrional yeast tossed in

Brown jasmine rice with steamed cauliflower, veggie sausage slices, sprinled with pico di gallo. Delish!

Oh, and small bowl of chilled mango chunks for dessert!

No breakfast for me today, I was too full from dinner last night (ate late)

L leftover sauerkraut with 2 smart dogs

S toasted english muffin with vegan butter

D Went out with friends and was not completely vegan Crying or Very sad Had bread with butter, bean/garlic soup, and roasted beet salad (with some chevre)
1 glass of wine

@Chec.. if you find yourself running short on time very often.. you might want to consider purchasing a pressure cooker.. they cook beans in 7-10 min!!! wow..

@Pam.. your post reminded me of the old joke. .. I have good news and bad news... bad news is that i couldn't fix your brakes.. good news is i made your horn louder. Laughing so you go out with friends, bad news is you eat non-vegan a little... good news is you have wine. i was thinking an extra glass of wine and it wouldn't matter anyway! Laughing

Reality is for me if i have too much glass of wine (and i am alight weight) i get hungry too.. then sleepy.. couldn't drive home from the resturant..
