What's everyone eating today?

I know our posts have dwindled a little, but I just listened to Dr. Barnard's show on PBS and I am pumped to continue with this and my mission is to get my sister (who is struggling with weight) to give it a try. I am feeling extremely good - I have been exercising 3 times a week, eating vegetarian since 1/1/11 and have lost 30 pounds! The only possible cloud on the horizon is the mammogram I just had looks questionable. Don't know if it's a problem with the x-ray or me! It's always good to hear how everyone is doing and what they're eating! B: oatmeal/strawberries and coffee w/soy milk L: Bean tortilla with sauteed veggies and hummus D: Roasted Veggie Sub Would like to hear from everyone!

I have strayed so far from my vegan diet that I feel like a fraud to even post in this forum. I'm ready to get back on track. Tonight I'll have a large salad and some kind of bean dish.

Don't be discouraged! Someone here has as a signature about the being one of progress not perfection. Not on of us is perfect. Example: I have been a vegetarian for over 20 years. Vegan off and on and strictly on for a while now. So the other night, I as popped my B12 sublingual tablet in my mouth, something caught my eye and I began to read the bottle and found out it has DAIRY in it! This does not make me happy! It used to be vegan and somewhere along the years, they changed formulas and I stopped reading the label! Even if you knowingly slip up, it is THAT meal. Not the rest of the day, week, month, year and most certainly NOT your life. Learn from it, learn what the temptation was and see if you can find an alternative for the next temptation, and there will be one. Keep learning, keep working on it, give yourself a hug because you need one and I am too far away to give it to you!

hi all, today i had kashi cereal w/soymilk.. coffee w/soymilk.. lunch was a yummy sandwich. We made not tuna salad, stuck it on whole grain bakery bread with a little spinach. then we grilled the sandwich. Sooooo good. the spinach wilts a little.. along with the sandwich i had some raw culiflower dipped into hummus.. today i also made a white bean soup. a half package of dry northern white beans... soaked overnight... then rinsed.. cooked w/ 1/2 veggie stock and 1/2 water.. and a medium chopped onion.. and a couple of cloves of garlic... cook one hour.. then add 10 carrots peeled & sliced, a whole lot of celery, some tomato..(either fresh or diced can no salt, no sugar) then my favorite... chopped Kale.. Now we have soup for the week.. it is a wholel dutch oven full, very thick... and chunky.. flavorful.. usually before putting in the veggies i blend up part of the soup with a stick blender, but i forgot this time. dinner will be some sort of whole wheat pasta, vegan mac & cheese oven baked with broccoli mixed in, and panko bread crumbs over the top. dessert is a chocolate oatmeal chewy cookie from vegan cookies take over the cookie jar. I am thinking of making the ginger & blackstap molasses cookies from that same book tonight..or maybe tomorrow.. the chocolate ones are a 10!! way good... can you tell i like this vegan way of life.. i almost giggle when i think of all the great food i can eat.

cch22 --- There you are! I miss your posts. You are always making good things. Thanks for that northern white bean recipe, I'll have to try that. What I really want you to tell me is where that tuna recipe is. I know you've mentioned it before and I told my husband (who loves tuna) he'd have to make it for me! Please post it!

B: oatmeal with blueberries L: hummus and romaine lettuce on multigrain tortilla and then rolled up and cut in little pieces S: baby carrot sticks D: Baked potato with salsa with nutritional yeast flakes sprinkled; Pinto beans after being soaked last night Dessert: Smoothie with frozen rapsberries, banana, cocoa powder, and almond milk I have come a long way...my taste buds must have changed because I didn't like carrots before.. I have progressed in cooking cause I make my own beans now...prevents bone loss to use less salt.

I thought this was a kickstart recipe?? Anyway honey loves this. I do use dry chickpeas that i have soaked overnight and then cooked the next day.. I have come to the conclusion that ONE can of beans= a little less than 2 cups cooked beans. Better Than Tuna Salad 2 cans Chickpeas drained & rinsed 1/2 cup Mayo (I used Vegenaise) 1 Bell Pepper-cored, diced small 2 Carrots-grated 2 Celery Stalks-small pieces 2 tbsp Parsley 1/2 cup chopped Walnuts 1 tbsp Dijon Salt & Pepper (optional-none for me) Mash or blitz the chickpeas until you get the "flaky" texture of canned tuna. You don't really want to get it to the hummus consistency. Mix in all the other ingredients and spread on your favorite bread, crackers or on top of a bed of lettuce. Or roll in lettuce leaves for something different. You can mix up the recipe to your liking. I added a tiny bit of minced onion. Give it a try! When you make this.. cook the whole bag of chickpeas and make the Morrocan chikpea Salad too.. (if you like spicy)

This is the recipe i used. I adjust it by loading it up with carrots, celery and kale. I use ALOT more. I get a whole pot full of soup. I sometimes add more water or veg stock. Also if i don't have a fresh tomato i use one or two cans of diced. Just be careful not to get the ones with sugar...or hfcs. Also since i got my stick blender, no more taking hot soup out and putting it in a jar blender. Just isn't that safe and it's messy. Suppose you could use a potato masher. Just me, but i don't like it all smooth or mashed.. just a little so it looks like it has a base instead of water/veg broth. WHITE BEAN SOUP 1 cup dry Great Northern Beans & Water 3 cups Water 4 cups Vegetable Broth 1 medium Onion 1 Bay Leaf 2 Garlic Cloves, Minced 2 medium Carrots cut to chunks 2 stalks Celery sliced 1/4 cup chopped Parsley 1 medium Tomato Place beans in a large saucepan. Add enough water to cover. Bring to boil. Boil 2 min. Cover & turn off heat. Let stand for 1 hour. Drain. To beans add: vegetable broth, onion, bay leaf, and garlic. Bring to a boil. Reduce heat; cover & simmer 1 hour. Remove bay leaf. Remove 1-cup bean mixture; blend till smooth. Put back in pot. Add carrot and celery. Use your own judgment as to how much carrot & celery to put in. ( I like lots) Simmer 30 min till vegetables are tender Stir in fresh tomato & parsley. Serve (if using canned tomato put in about 10 min before it is done to give them a chance to boil a little.)

Honestly you gotta try these... and they are vegan..just use florida crystals or unrefined sugar... and dark chocolate chips that don't have milk... I did't have cherries, and i used all vanilla. they are from vegan cookies take over the cookie jar.. Chocolate Fudgy Oatmeal Cookies 2 cups Quick-Cooking Oats 1 2/3 cups Flour 2/3 cup Cocoa Powder ½ tsp Baking Soda ½ tsp Baking Powder ¾ tsp Salt 1 ½ cups Sugar 2 TBs Ground Flax Seeds 2/3 cup Nondairy Milk 2/3 cup Canola Oil 1 ½ tsp Vanilla Extract ¼ tsp Almond Extract ¾ cup Chocolate Chips 1 cup Dried Cherries, chopped (optional) Preheat oven to 375° F. Line 2 baking sheets w/parchment paper. (btw the recipe says 350 so adjust to your oven) In a medium bowl, stir together oats, flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In a large bowl beat together sugar, flax seeds, and nondairy milk until smooth. Add the oil, vanilla, and almond; beat until well mixed. Fold in ½ of the flour mixture to moisten, and then fold in the remaining half. Just before the mixture is completely combined, fold in chocolate chips and cherries if desired. Each cookie is 2 TBs of dough onto the sheet. Leave 2” of space b/t each cookie. If desired flatten slightly. Bake 10-12 minutes until cookies are firm & risen. Let cookies rest on baking sheet 5 min then transfer to wire racks to complete cooling. Makes 2 ½ doz.

Cynthia, Thanks so much, I just printed out all 3 recipes and warned my husband he's got to make me tuna for lunch! I never used vegenaise or any vegan mayo, I'll have to look for it. I used to use SmartBeat mayo, it was fat free, but has dairy in it.

I have used dried beans for years. I buy a HUGE bag of pinto beans from Costco. When I have a house (kitchen) again (SOON) I will start cooking again. I am really looking forward to it.

i have been making a tuna-like salad lately from Alicia Silverstone's book. It is tempeh based, and only uses a very small amount of mayo (1-2T). I used a vegan mayo from Trader Joes. My anti-vegan husband, picky teen, and adventurous preschooler all liked it. The preschooler ate all of the last batch I made. As soon as she finished it up tonight, she told me that I had to make more tomorrow. It is loaded with veggies, which is great because she often won't eat many veggies. For some recipes, like Vegetarian Times' coleslaw, I use blended tofu for the mayo. I add lemon juice and garlic powder sometimes. Today: Breakfast: leftover mashed cauliflower and BBQ portobellos, coleslaw lunch: gumbo (from Ornish cookbook, very good!), sauteed cabbage with aminos and onion powder, apple slices dinner: orange seitan stir fry (from Christina Pirello book), rice, salad. I have discovered a new recipe that is a hit with the whole family, except one who is not a pineapple fan. I have been making upside down pineapple cake, using Pirello's upside down blueberry cake as a starting point. I cut out all the oil, and cut down the sugar by a lot! My teen said, "this is good, I mean this is really good. It is so sweet." I don't hear that from her very often, she pretty much just likes cheese, chocolate, and triscuts, plus junk food.

Hi there, I had oatmeal for breakfast. Got distracted and forgot to add my spoonful of ground flax seed on top. Tomato, lettuce and hummus sandwiche for lunch (used 2 slices of wholemeal bread). I am about to try "Curried cabbbage and peas" for dinner as I have half a cabbage in the fridge and needs to be used. The recipe is from the "Appetite for Reduction" book by Isa Chandra Moskowitz. I am managing well and want to stay eating vegan (as opposed to vegetarian). I am 90% there. Have had the occasional meal (3 times that I know of) with diary in it and had an upset stomach after (cramps, diarrhoea, nausea) so I believe that I may have a degree of lactose intolerance that is more obvious now I am eating a lot less of it. In hindsight I think I had symptoms all along such as excessive gas but overlooked it. I am keeping a food diary of such times to watch for patterns, otherwise I would think I was 'going nuts' and imagining it all.

My 12 yr old tuna-lover is quite content to have this chickpea "not-tuna" instead - I ask him when I'm heading out to the grocery store if he wants tuna. Lately he's saying "do we have chickpeas? Okay, then I'm good" What I'm having today (since I can't even remember what I had Saturday :lol b: usual cereal with plant milk l: reheated stir fry (brown rice, bell pepper, onion, carrot, celery, cashews, splash of soy sauce, splash of balsamic vinegar) d: vegan quiche with kale (kind of like a spinach quiche) in honor of PI day (pie/pi  snacks: banana, apple, two clementines --Deb R

I've been messing around with my diet, to no good effect. Thought I could put back on some pounds that way - not happening. Therefore, I'm eating up my nonvegan meals in the freezer and when they are gone, they are GONE! Back to just vegan in a few days.

Hi All, Yesterday the interesting meal was vegan stuffed shells. yep vegan & delicious! For those of you that have been here for a while, you might remember this was the one dish that did me in at Christmas eve.. i ate regular stuffed shells like there was no tomorrow. I finally have a GREAT dish to replace it. I will take this next Christmas and i bet vegan and non-vegan will both eat it! Spinach & Broccoli Stuffed Jumbo Shells 1/2 pkg (6 oz) Jumbo Shells 1 10-oz pkg Frozen Spinach About 1 ½ -2 cups left over or Frozen Broccoli Crowns 1 8-oz pkg Vegan Cream Cheese (I use tofutti-plain) 1 14oz Lite Firm Tofu-drained & squished & crumbled 3 Scallions-sliced including most of green 1 tsp Oregano 1 tsp Basil a sprinkle of nutrional yeast..probably 2-3 TBs 1 tsp Parsley 1 24-oz jar pasta sauce or the quick marina sauce Preheat oven to 350 degrees. Cook shells according to package directions. When shells are done, drain & rinse with cold water. Cook Spinach & frozen Broccoli; cut crowns slightly to bite size pieces. Drain off any access water. Place in large bowl. Add all other ingredients except sauce. Cover the bottom of a 13x9 pan w/a thin layer of sauce. Using a large spoon, spoon the spinach mixture into each shell (i overstuff) & arrange in the baking dish. Pour the remaining sauce evenly over the stuffed shells. Cover with foil. Bake for about 45-60 minutes.

I haven't been on the boards lately, back at it now! I just received the book McDougall Program for maximum weight loss, can't wait to read it and start a stricter wl program for me (I hope!)
