Yummy Vegan Ranch Dressing

Here's a recipe I found on the internet for a yummy Ranch salad dressing. I made it one day and used it the next. I thought I died and went to "Salad Dressing Heaven" Smile


Best Vegan Salad Dressing

1 cup vegan mayonnaise ( I used Vegenaise, found in the refrigerated section at Health Food Store)

1/2 tsp of garlic powder

1/2 tsp of onion powder

1/4 tsp black pepper

2 tsp of parsley (chopped) or dried parsley flakes

1/2 cup of soymilk

Whisk all ingredients together. Chill before serving
Add more soymilk to thin or more vegan mayo to thicken to your desired consistency.

Note: I added a couple tsp of finely chopped chives

*****Another recipe I found on the internet had the same ingredients except they added a few tablespoons of Red Wine vinegar.

Would be good as a raw veggie dip too.

Hey Vikki

I noticed the new slogan you added to your signature..... "Thin Again in 2010"...love it!

Your other quote.... "My path is one of progress not perfection"......I wrote that one in my journal. I think it helps me to keep things in perspective. When I was on the vegan plan 9 years ago, I was trying to do the "perfection" thing.....coming at it with a whole different attitude this time. Not beating myself up if I have a little treat now and then. Do my best when I'm a guest and going out to eat etc.

I'm just feeling so much better overall and that's giving me incentive too. The best part is the "energy"....it's been soooooo long since I've felt any!

I see my Rheumatologist again in March. Can't wait....hoping to lose more weight by then. I'm actually losing more inches than weight. My clothes are getting loose and I'm fitting into some I couldn't wear before the Holidays. My goal is to prove to him that a vegan diet does help Lupus, since he chuckled when I mentioned it before. Ultimately, I want to be able to be off the Lupus meds or at least cut in half before too long.

Perfection is too much like work and makes me grouchy!!

The dressing sounds yummy, but it's more fat than I've been eating, so I'm gonna try it with low-fat tofu mayo. I'll report back. Smile

Yes, using a "low-fat" version would be better for sure. Look forward to hearing how you like it Smile

I had my non-veg husband try it and he thought it tasted pretty good. He's a big ranch dressing, so he needs to try it out on a salad next.

Just recently coverted him to using some rice or soy milk on his cereals and oatmeal. One thing at a time.

I awaiting my cholesterol results, which I'll get tomorrow when I see my doctor. Anxious to see if and how much it came down??????

Oh, I'm getting my cholesterol tested tomorrow, too. (It's never been high, but it's just time for my blood tests.) I'll be curious to see how we're doing.
