Easter meal

What is everyone having for Easter? I'll be having ham for my meatloving relatives. The scalloped potatoes, I'm not sure how I'll cook them. Then a sweet potatoe for me (no one likes them). Asparagus, broccoli, cranberry relish. The baked beans will be vegan, although I've never had vegetarian baked beans. For dessert - cherry pie. Maybe I'll make the chocolate rasberry pie that Susan demoed with silky tofo.

Hmm... been wondering the same thing! We're not having any Meatavores, so I don't know what to do for a "Main Dish Centerpiece"!! All sides & desserts I can handle; and I know a lot of folks have "just sides", but, we are so "Traditional" when it comes to a Holiday meal, it just won't seem the same without something!

WWW.vegparadise.com has a receipe for curried ham polenta that is made with Yves veggie ham and served from a ring mold. I've never had any veggie ham, so I don't know how it would taste, but it looks pretty.

I changed my scalloped potato recipe to use all vegan ingredients and yummy! Hubby wants me to make it on a regular basis

Actually the first time I made the scalloped potatoes I kept it real easy.I just sliced the potatoes and onions then layered them adding salt and pepper (very little salt since I am trying to cut it out) warmed soy milk (have also used rice), poured it over and baked it. The next time I sprinkled in some soy bacon bits on the top. I try to keep it easy then I am temped to make several other things at the same time. I hope you all have a great Easter Jeannie

Thanks everyone for the suggestions. I found a recipe for red cabbage and peas that looks pretty. I think I'm creating a buffet. It should be a nice day. Happy Easter.
