I don't see any reference to tofu on the 21 day meal plan. Is it not an option?

The chocolate raspberry mousse dessert uses silken tofu and I know there are other recipes that use it as well. It's used as an ingredient, not by itself so you'd need to check each recipe individually, it doesn't just show up as "tofu" on the menu mostly.

Research shows time and again that the lesser processed soy foods (beans, tofu, tempeh, soy milk, miso) are certainly safe, and actually beneficial to health. PCRM has an up-to-date summary sheet about soy that you can read here:
