Need to gain weight - Type 2

Hi!
Glad to be part of the forum.
Was wondering if anyone can offer suggestions to gain weight on the vegan diet as a diabetic? I understand Dr. Barnard recommends leaving out as much fat as possible, but I guess I am under the impression that I need it to gain. I am slightly underweight right now.

Calories are calories wherever they come from and you need to take in more than you use to gain weight (and take in less than you use to lose weight). Make sure you're not limiting portions but are eating until you are full. And, too, be sure that you actually need to gain weight before you go gaining. The kickstart aims for 10% of calories from fat - so if you want to gain weight, you'd look at how many calories you need in a day to gain weight and then aim for 10% of that being from fat. Just as to lose weight you look at what your calorie intake needs to be and aim for 10% of that. Aim for things that naturally have a bit of fat rather than adding in extra fat. For example, avocado and nuts contain fat built right in (which is why they're on the 'be careful' list on the kickstart) as opposed to something like salad dressing where you're adding fat to a salad which is mostly low in fat. Add a little avocado to the salad instead of the dressing (for example).

I also had to gain weight as a vegan, and found that the only thing that worked was eating a lot of healthy fats (nuts and avocados and cold-pressed oils), as well as a lot of grain products (whole grain breads, tortillas, bagels, muffins, etc.). I'm not sure how well this would fit in with your diabetic plan, but it worked for my hypoglycemic plan. If you'd like more details, PM me.
