favorite kickstart recipe?

Going along with the 21 day meal plan.. do you have a favorite recipe? and did you tweak it?

I like the confetti couscous, thai soup, and rips burritos. The confetti cousous i made last kickstart; but the other 2 are new and definately keepers.

i like the mexican corn salad.. but not so much the sauce.. maybe i will work with that and try something a bit different.

I really liked the confetti couscous salad, the hoppin' john salad and the southern beans and greens with LOTS of hot sauce! While doing this kickstart my eyes have been opened to other online recipes and came across a sweet potato burrito recipe from allrecipes.com (it's called "Addicting Sweet Potato burritos") that is also really good. Over 45,000 people have downloaded that recipe, so clearly it's good : )

I also have to go with the confetti couscous and the spicy thai soup. I also LOVED the curried lentil soup, that's something I plan on making over and over again. The barbeque portabellos were also a big hit. Honestly I liked just about everything except the broccoli soup (gross) and the hoppin' john salad (bland). I saved a LOT of recipes to keep for the future.

Confetti Couscous Salad was a hit here. And inreally love Rip's Burritoes, and variations on that theme. Last kickstart, I made the BBQ portobellos and remember loving them too.

I didn't try the Thai soup but I definitely will soon. I saved a couple of recipes to try in the next week or two.

my mom made the thai soup.. and added butternut squash..and some sweet curry and black & red pepper. she loved it..
she mashed up the butternut squash. made the soup thicker.. i guess she had some lft over in her fridge.. she is catching on..

roasted red pepper soup is still a favorite from the last kickstart. The hummus and the quinoa pilaf are the other two that are favorites/regulars. Plus, we love experimenting with all the dark leafies now - tonight's dinner was vegan quiche with spinach and beet greens.

The confetti couscous is my favorite, then probably the lentil artichoke stew and the portebella mushroom recipe, YUM!

And before the last kickstart, I'd never had lentils, couscous or portebella mushrooms! This way of eating has definately opened my eyes to the wonderful healthy different foods out there.

One thing I regret that I didn't do during this Kickstart is try some of the recipes Sad. I did make a few at some point a while back and they were good but nothing exceptional sticks out in my mind, probably because it's been too long since I made them.

I do plan on using the recipes a bit more in April's kickstart, especially since I find that in Israel, they stock produce that is in season and when it's in season here it's super fresh and CHEAP. Just went shopping a few days ago with my mom and I didn't plan on it, but the red and green cabbages were so gorgeous and cheap (about 99 cents a pound) that I bought one of each. I plan on making a sweet and sour cooked cabbage with beans recipe that I found online this weekend.

Southern beans and greens...until doing the kickstart had never had kale....really like it....I saved all the recipes and menu plans so I can just repeat them until April!!! Can't wait to start the next one!!! Cool

I have enjoyed some of the PCRM recipes of the week. I think you have to subscribe to the thread to get them. During the last kickstart I remember a garbanzo bean salad sandwich that was excellent.

Same here Debbie. I'm starting week 1 again on Monday. I find it easy to stick with a plan if I have a menu to follow, and it's cheaper to shop that way for me too. I do add extra veggies in case I'm in the mood for something different during the week.

Do you all know about nutritionmd.org - Search Recipes -- you can even pick the option to list all.

This site has all the recipes from the kickstart PLUS a lot more! You can try other new ones -- a lot of them a really good - you won't get bored by just repeating the same ones.
