questions from a newbie-

I am getting ready to start the 21-day kickstart and have read Dr Barnard's book and have some questions.
He says no white potatoes, but, several recipes in the book and at nutritionmd call for red or yukon potatoes. Are these ok?

personally I eat white potatoes, baked, skin on no salt, no magarine. Excellent source of potassium. I am HWP and not diabetic. My issue is high bp. Sweet potatoes and yams, as they are mislabelled in the USA are really the best. Antioxidant power houses. Too many of us in the USA only eat our potatoes as fries, cooked in hot fat or drenched in mayo.

It depends on how severe your diabetes and blood sugar issues are. If you are not diabetic or worried about a low-glycemic diet, then white potatoes would be alright in small amounts. Sweet potatoes are preferable, though, for their higher nutrition content.

There are also differences between red or new potatoes and big old russets as well. I'm no nutritionist or botanist or anything but I think it has something to do with the development of the starch content over time and from variety to variety.
