What is your food today Mon Jan 24th?

HI,

So the kickstart is officially over. so is anyone out there or is it just me and the crickets?

Today is a cooking day for me.. I plan on making one soup..spiced carrot and celery,some type of burger, and maybe whole wheat muffins.. oh and don't forget the highly reccomended chili mac.. that way we should have food for the week. I already have one bowl of thai soup & mexican corn salad that are coming to the end portions..

l-soup & sandwich
d-chili mac

btw.. i found soy milk at the dollar tree..it is westsoy and organic... it is a little different than the ones at the grocery store..first ing water, 3rd ingred water.. and of course sugar. I like it because it sits on a shelf not in the fridge.. i can save it for opps.. i ran out..

This looks easy enough. I will leave out the oil.

Spiced Carrot and Celery Soup
Colourful, lively and warming.

Ingredients:

1 tablespoon of olive oil
1 large onion, chopped
2 cloves of garlic, chopped
1 teaspoon of curry powder
6 medium carrots, roughly chopped
4 large sticks of celery, cut into pieces
2 pints/4 cups/1200ml of water
seasalt to taste

Fry the onion and garlic in the oil for a few minutes and then add the curry powder and stir to release the flavours. Add the carrots, celery and water and cook gently until the vegetables are tender. Whizz up in a liquidiser/blender until smooth and add salt.

b: the usual cereal, plant milk
l: black bean patty, ketchup and homemade pickles (no bread/bun), and a side of veggie slaw
d: spinach and beet green vegan quiche
s: apple, banana

And, I'll probably have another snack after dinner, not sure what but something yummy and fun. Tomorrow should be "fun" (not) prepping for colonoscopy (routine, nothing suspected but I'm 'of an age' and my dad's sister is a colon cancer survivor). Makes me really nervous to think about only juice and vegetable broth (and water) all day - I'll be obsessively checking my blood sugar levels all day for sure. Took the day off so I don't have to deal with that and being at work, driving back and forth, etc.

Well, now that the 21 days is over, I'm going to do a "Mary's Mini" for a few days (for you McDougallers out there, you know what I'm talking about).

b: hash browns, no oil, spinach
s: banana
l: baked potato(s) smothered with steamed veggies
s: McDougall soup cup, maybe an apple
d: baked potato(s) smothered with steamed veggies (different veggies than at lunch).


The idea with M'S M is to get back to basics and simplicity. Pick one starch as the basis of your meals, plus veggies to take up about half your plate. And do that for EVERY meal for as long as you do the mini (I am doing 5 days, M - F this week). It gets boring and a bit blah. So, after a couple of days you don't eat so much. It is a little "mini" diet. I'm doing it because I gained a couple of poundes during the kick-start (too many good recipes!) and need to get back to basics.

so I made the spiced carrot soup. The carrots are shredded and the celery is sliced.. it is definatly spicy. It is really good for how simple it is. I am sure i put way more carrots and celery in it. I shreded too many carrots and I had 3 additonal stalks of celery that needed using.. So i had 5 cups of water instead of 4. I like a thick soup. so here is the fixed up recipe.


Spiced Carrot and Celery Soup
1 large onion, chopped
3-4 cloves of garlic, chopped
1 heaping teaspoon of hot curry powder
6+ medium carrots, grated
4 large sticks of celery, sliced pieces
4-6 cups of water

Sautee onion & garlic in water for a few mins. Add curry powder; stir to release the flavors.

Add the 4 cups water. Then add enough carrots and celery to make a hearty soup.
If you have a few extra chopped veggies or it’s too spicy you can add more water.
Taste and adjust.

Bring to a boil; reduce heat.
Simmer until the vegetables are tender. (abt 8 min)

Use a stick blender to wiz some of the soup to provide a thicker base.

FYI for anyone still reading posts. I am usually lurking, it make take a day or two over the weekends, to get back to you, but I always review what comes through!

Hi all,

I'm still here and posting - I love seeing what everyone is up to and how your all doing. I'm keeping at this -- I did so good this time and I never want to go back!

I'm still not over the cold but I feel a bit improved today and hungrier than usual. Now my son has a stomache virus Sad


B: Oatmeal
L: Salad w/white beans and FF Italian dsg., pumpernickel bread
S: Apple sauce, popcorn, tortilla w/hummus
D: Pasta ????

haa haa i made the chili mac.. it was wonderful. thanks lisa for the encouragement.. we were sitting at the table sweating eating it..since it is below zero outside, any heat was welcome heat..

then i made corn muffins.. we liked them..
i used
2 cups corn meal
2 cups whole wheat pastry flour
1 cup unsweetened applesauce
1 cup unsweetened soy milk
4 tsp baking powder
3 Tablespoons honey

just mixed it all together... put in muffin tin..(silacone) Baked about 30 minutes at 350 degrees.

They are corn tasting..medium to heavy density.. to the point of being lightly chewy. You could probably leave out the honey if you wanted to. the only reason i added it was someone told me honey makes things lighter and keeps baked goods from going bad a little longer.. I can't say they are sweet, but they are good. We are keeping that recipe and would make them the same way again.

Breakfast: Oatmeal with Aldi's frozen blueberries

Snack: smoothie made with frozen banana, almond milk, and Hershey's cocoa powder

Lunch: mini pizzas made with homemade pizza sauce, diced red pepper toppings on Arnold's sandwich thins

Dinner: black beans, diced tomatoes, and little bit of frozen corn all in one pot and heated for 5 minutes

Today was a rough start to the week - I had some car issues that fouled up my whole day! I ended up having a slice of regular cheese pizza at night out of pure frustration, and I got very sick to my stomach. I was lactose intolerant before the kickstart, but now that I've "cleaned" my system in a sense I think putting that much dairy back in my body was a really bad idea. So I'm starting over again for Tuesday

B- toasted bagel with earth balance
L- leftover chili mac
D- slice of cheese-stomach pain inducing pizza Crying or Very sad

OH LISA... ouch.. i feel for you.. reminds me the other day kg and i were going into the supermarket. Right beside the supermarket there is a pizza place.. wow it smelled delious.. we started talking. saying pizza smelled really good... then we realized it wasn't pizza we were smelling ...it was garlic... it was more like warm garlic bread... we can have that! and the urges went away.. it was more like a shoulder shrug..
oh well...
you know i think it might have helped some newbies that we shared the urges and that we are not all perfect.. i am glad we did...

So true, because I've made cheese-less pizza and it's just delicious! It's all about the sauce/seasonings and veggies for me. Last night out of pure frustration and no time to cook - I gave in to the take out place. Big mistake! I actually feel like I have a hang over today if that makes sense. I was up all night with stomach pains. Just awful.

Back on track today.
