What is your food today Tues Jan 25?

Hi All, b-cereal l-garlic hummus, onions, tomatoes, avacado, and sprouts wrapped up in a whole wheat tortilla.. and a bowl of spicy carrot and celery soup. d-leftover chili mac.. I made that wrap this morning.. and wrapped in al foil to take to work. That is a pretty easy to go meal. No advance planning required. so mom calls me yesterday.. she made beans and rice.. she just had to tell me all about it... she has been making a few vegan dishes this last week. She probably has not eaten meat 3x this week. so the conversation goes like.. "cindy you would never believe what i made" "what mom?" ... i made rice and beans.. oh that does sound good mom.. did you add greens?" "no cindy i had veggies on the side. cindy i could never stop eating meat" "that's what kg said mom. who would have thought? i mean not in a million years!" (laughing) "well cindy, i like my hamburger." "ok mom you don't have to give it up, so tell me again how you made your beans.." i did _____ and ____ and added____ it was sooo good.. I will save you some." We hung up and i started laughing.. She might be a closet plant eater.. I guess she just doesn't want to be called vegan. i used it a little to reinforce kg's commitment.. i turned to kg.. told him about the conversation.. and told him truthfully that he was the inspiration to have others consider it.. thinking if he could "give up" meat then anyone can.

You must be a very inspirational person to have people try different plant-based meals! I should be so lucky with my mama.

Oh that lunch sounds good. I need to get me some sprouts! lol. I could see that being a regular go-to lunch for work. Great idea! I do think it's interesting how people want to share with me what they're eating now - even if they're not vegetarian. One of my favorite things to hear is, "well I don't really eat that much meat." Like they don't want to be known as a meat eater? I just think it's really interesting. Baby steps though, right?  B - cereal with almond milk L - PB&jam on whole wheat bread, banana D - not sure yet... maybe spicy thai soup since I've been wanting to make it again!

haa haa well.. to inspire people you have to find out what makes them tick. my mom has always been a person who likes to cook and is known as a good cook. so saying.."mom, i wish you would fix vegan .. you are a great cook and i would get some fantastic meals!" doesn't hurt. but keep it truthful. btw.. that is my mom's exact words. "i don't eat that much meat, i bought a pound of hamburg and made 5 patties out of it." I just say ok; one day a week without meat might be nice..give your system a little break....did you try the chili yet? i do drop off some things for her to try.. sometimes they sit in the fridge.. like she is afraid to like them..lol.. slow but sure.. baby steps ..

My food today? apple juice, veggie broth, apple juice, veggie broth, Bengal Spice tea, water, tropical juice blend, Gatorade - yup, prepping for a "procedure" so nothing solid. A bit nervous how it will play out with my blood sugar but that apple juice tasted SO good for breakfast (I usually save fruit juices for medicinal purposes). If nothing else, I'll drop a pound or two of water weight and my colon will be squeaky clean! --Deb R

B: Water, Walnuts, Banana, Apple and corn chips for breakfast. L: Huge salad w/black beans. D: Veggie soup w/quinoa Very basic today.

I have so much in my fridge I still need to use up. I told my 12 year old daughter to stop opening things. It's fun to experiment and get creative anyway. So we're mixing smoothies and combining things! B: oatmeal L: cooked quinoa - added rice milk, mango, apricots (this was really good! - these are new foods for me) D: guacomole/tomoatoe??? got to use this up among other things like my bock choy and coucous salad ingredients???? P.S. that scale is still coming down!

B: 2 slices ww toast, coffee w/almond milk L: carrots, pretzels, salsa (a very weird lunch) D: going to make chunky ratatouille sause with brown rice and lots of water all day

Breakfast: oatmeal with frozen blueberries Snack: orange, raisins Lunch: whole wheat wrap spread with Aldi's refried fat free beans and layer of spinach leaves, then rolled up and cut up like Veggies in a Blanket Dinner: White Bean Pate (tried for the first time - never tried cannelli beans before either) spread on corn tortillas; rice pilaf Dessert: Smoothie with frozen blueberries, frozen banana, cocoa powder, and rice milk

Hi all. I'm still checking in here. Had a busy day so this is late. My attempt to do Mary's Mini lasted about 1 day.  Not enough variety for this kid I guess. B: Oil free hash browns with spinach and mixed veggies s: red grapes l: leftover BBQ beans with seitan, over brown rice s: steamed and chilled sugar snap peas d: baked potato that I topped with split pea soup mixed with cooked frozen veg mix (broccoli, summer squash, onions, snap peas, asparagus... etc.)
