Day 7 What RU eating?

hi..
for me it is a cooking day..
i think i am making a speghetti squash/black bean casserole with a vegan cornbread top.

we also soaked some chick peas last night, so i can make a cold salad.. and not tuna salad.

b-cereal
l-not tuna
d- speg casserole.

what about you?

This is not my first kick-start, but it is my first time getting on the forum. How do you make your black bean casserole?

Santa Fe Spaghetti Squash Casserole
1 medium Spaghetti Squash (mine weighed 2 pounds)

Olive Oil Spray
1/2 cup Onion, diced         2 cloves Garlic, minced
1/2 cup Red Bell Pepper, chopped   1/2 cup Green Bell Pepper, chopped

1 (14-oz.) can Black Beans, rinsed and drained
1 (4 oz.) can Chopped Green Chilies      
2/3 cup fresh or frozen Corn
1 packed cup chopped Fresh Spinach      
1-1/4 tsp. Chili Powder, or to taste

2 tbsp. fresh Lime Juice      1 tsp. Sea Salt
Crust:   
1/2 cup Corn Meal            
1/2 cup + 1 tbsp. Hot Water
1/2 tsp. Salt      1/2 tsp. Agave Nectar (or other sweetener)
Cut the spaghetti squash in half lengthwise; place it in a microwave-safe casserole dish, cut sides up. Add 1/4 cup water; cover tightly (use plastic wrap if necessary). Microwave on high power until the squash is tender, 10-12 minutes. Allow the squash to sit in the dish for at least 5 min. after cooking. When it’s cool enough to handle, use a fork to scrape out the strands of squash into a bowl

Preheat the oven to 350 F.
Spray a large skillet with the olive oil spray. Sauté the onion, garlic, and bell pepper until tender. Add black beans, chilies, corn, spinach, & chili powder, stir, and allow to heat through. Remove from heat. Add the squash, lime juice, and salt. Pour the mixture into an oiled casserole dish.
In a small bowl, mix together the crust ingredients. Spread the batter smoothly over the top of the spaghetti squash mixture. Sprinkle with a little chili powder, if you like. Bake at 350 for about 25 minutes, until crust is firm and beginning to brown around the edges. Serves 4.


This recipe is from fat free vegan. I was not at all impressed with the top. In fact i would not make it again this way.. Instead i am going to try my vegan cornbread on top.

Cornbread

6 Tbsp Water         2 Tbsp Ground Flax Seeds

1 cup All-Purpose Flour      1 cup Cornmeal   
¼ cup Sugar            4 tsp Baking Powder   
¾ tsp Table Salt

1 cup Soymilk         ¼ cup Canola Oil

Preheat oven to 425.
Spray 8” square baking dish w/nonstick cooking spray.
Bring the water to a boil in a small saucepan. Add the ground flax seed, reduce heat; simmer the flax seed in water for about 3 mins or until thickened, stir occasionally.
Set aside.

In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.

Add the flax seed mixture, soy milk, and canola oil to the flour mixture. Stir or whisk just until smooth & combined. (Do not overbeat)

Turn into prepared baking pan. Bake for 20-25 minutes, or until a toothpick inserted in the middle comes out clean.

B- First time with chia seeds! Added 1 tbsp to grape nuts, soy yogurt, and fresh blueberries...oh and some coffee with soy milk.

L- TBD, but maybe the Carrot and Red Pepper Soup that I want to make for meals this week.

D- TBD, but maybe a freshly made green juice with kale, beet, carrot, and apple.

S- I'm not sure...maybe need to make another batch of hummus.

Thank you for the recipe cch22. I've never worked with the speg squash. I've never even tasted it. This will be a good project for me next weekend. I don't have a micro, but will work around that.

B - multi-grain cheerios with last of Kashi go-lean and some rice chex with soy milk, coffee and soy milk also.

L - warmed up chunky veggie chowder

S - 1 1/2 navel oranges

D- one honkin' big salad - romaine, cabbage, baby spinach, red pepper, raisins, chopped walnuts, carrots, green onions, Newman's own lime vinegarette (with the oil poured off).

Had a BAD weekend...Friday night-- (friday day was good) ended up eating way to much, went out for dinner with the boyfriend to a thai, got chilli basil rice noodle (NO oyster or fish sauce),2 x glasses of wine, I also has vege spring rolls, but now worried they wouldnt have been vegan after a comment from a friend. afters was from the chocolate shop, they have vegan alternatives, so I has a lemon crepe

Saturday I skipped brekky and had hot chips and a bread roll, pasta and vegan tomato/vege chilli sauce at my mums place

Sunday vegan roast dinner, sweet potato, onions,garlic and carrott, sanitarium roast roll all roasted, gravy.

feeling pretty annoyed at myself now after such a healthy week.. its SOOO hard to eat out... I was away from home all weekend. next time shall prepare before I go.

@ try one more time..
I did make that casserole.. it came out great. My hubby thinks it is one of the best things he ever ate.. i made some adjustments to the recipe... so here they are..
Speghetti squash can be cooked in the oven, it takes a lot longer.. also scoop out the seeds before you cook it. I noticed it didn't need 10 min in the microwave..

1) I used a small whole onion, one red pepper, 1/2 of a green pepper.. forgot the garlic.
Instead of 1& 1/4 tsp chili powder, we like heat so i put a 3/4 tsp chipolte chili spice and 3/4 tsp chili powder.. some garlic powder, oregano & paprika to taste.
2) i sauted the veggies in water not oil. it says to do it till they are tender.. i would do it less..so they are firm, not mushy.
3) I skipped the lime juice and salt.
4) just barely wilt the spinach in the dish.
5) cornbread is wonderful.. but i added the green chilis to the cornbread instead of the dish. then added just a little more cornmeal till it looked right. I am not sure it need the green chilis.

6) after i put the cornbread on top of the dish.. i baked it all at 400 degrees for about 35 min. the dish was bubbly & hot. the cornbread was slightly brown and cooked all the way thru. (you don't cook the the casserole and then cook the casserole again with the corn bread.. just cook it once after you put the cornbread on top)

if you want me to write it up how i changed it.. i will .. as i said i was not happy with the first go round ... so i modified it.

Today I made the Cheesy Sauce posted by Bugsmom and MollyHorn. I made it with almonds and it was delicious. To limit the amount of wonderful baked tortilla chips I ate, I made them two at a time, in a waffle iron(Mrs. Esselstyn's idea) and it worked well.

Yesterday a couple non-vegan friends stopped over at lunchtime and I made them Happy Herbivore black bean burgers, kale chips, easy bean dip, and oven-baked tortilla chips and they liked everything. They taught me how to make baked sweet potato fries so I made them again today. I used Mrs. Dash's Salt-free seasoning, no salt, and no cooking spray. I lined the cookie sheet with parchment paper.
