Eat more greens!

Thanks for such a timely topic, Essie! I have some Swiss Chard in my crisper, waiting for me to figure out what to do with it. Usually I sauté in vegetable broth and eat them straight with a little cajun seasoning or Bragg's Aminos, but I'm pretty bored with that. I can't do onions, and it seems that most greens recipes start with onions! I did a spin on this one, without the oil and onions, and it came out decently. http://vegweb.com/index.php?topic=29430.0 I've used this idea, but with different ingredients (I used asparagus, garbanzo beans, and Walden Farms ranch dressing). These work best if you blanch the collards for 1 minute first. http://www.onefrugalfoodie.com/2010/03/17/collard-green-wrap/ I'd love to hear any other ideas!

I just cleaned out my fridge and found Swiss chard that needs to be eaten TODAY. So, checking out my "Vegan Soups and Stews" cookbook (by Nava Atlas) I found Swiss Chard Stew: 2/3 cup sun-dried tomatoes (not oil-cured) 1 Tbsp extra virgin olive oil (I'm leaving this out) 1 medium onion, finely chopped 2 cloves of garlic (I'll likely add more) 2 medium carrots, peeled and diced 1 large bunch Swiss Chard (10-12 ounces) 4 cups of water 1 16-oz can salt-free diced tomatoes 1 10-12 oz. pkg frozen vegan tortellini (I don't have this so will use just some leftover grains instead) 1.5 tsp Italian herb seasoning 1 medium yellow summer squash, finely diced (I'm using zucchini because I have it ) 2 Tbsp minced fresh dill or 1 tsp dried Salt & Pepper to taste 8 fresh basil leaves thinly sliced. Cover dried tomatoes with 1 cup boiling water and set aside. Heat oil in large soup pot and add onion, garlic and carrots and saute over med. heat til golden.(I'll water saute instead) Rinse chard well and trim away thick mid-ribs and cut into 1/2 - 2" shreds. Place in another large pot with just enough water to keep bottom of pot moist. Cover and cook til tender and bright green (5-7 mins). Remove from heat and set aside. Add water, tomatoes, tortellini and seasonings and bring to rapid simmer, then lower heat, cover and simmer gently for 15 minutes or until carrots are tender. Add squash and dill. Cover and simmer over low heat for another 10 minutes, til squash and tortellini are done. Stir in chard, add more water if needed to give stew a moist yet not soupy consistency. Season with salt and pepper, garnish with a few strips of basil. This recipe serves 10 so I will reduce quantities to make half. Hope it's as good as it sounds!

Oooh, yum. I've made that stew--I substituted potatoes for the tortelini, but I think rice or something would work well too. I really like NA's book. A swiss chard recipe I think I got from Crescent Dragonwagon's book calls for satueeing the greens with olives and raisins. (I use water, not oil.) I haven't actually looked at the recipe in years though! I just use some dried fruit (cut small if it's not already, like raisins, and it doesn't take much), some olives or capers or even artichoke hearts, and a shot of balsamic vinegar at the end. The idea is slightly sweet and somewhat tangy, with the "green" taste of the chard. I haven't been buying chard lately (cuz I've been obsessed with bok choy) but this makes me want some now.

Hee hee, I'm big on the collard wraps too. (I went back to click your recipe links.) I've even been using them as tortillas for burritos.  I really love kale, period. I can actually just eat it raw with a little lemon or ginger juice. But it's also great sliced thinly and warmed with some white beans and lots of garlic, with sundried tomatoes and herbs. This is a regular supper at our house! You can put in other veggies too, like zucchini or artichoke hearts, etc. (The Trader Joe's frozen artichoke hearts are great--no oil, no salt.)

I ended up doing the chard with just balsamic vinegar and lime juice, and it came out nicely. I just wish greens didn't reduce so much! I have the "Food to Live By" cookbook from Earthbound Farms, and it has a (sounds like) similar recipe for swiss chard with olive oil, raisins and pine nuts. I almost made that tonight, with walnuts instead, but I wasn't going to go all the way to the store and buy a huge package of raisins for just one recipe.  Oh, I wish we had Trader Joe's here! I'm in Texas, so no such luck. I work at Central Market, which is a gourmet/high-class-rich-people grocery store, so I can get a lot of things there, and there's a Whole Foods one town over, but that's about it. THANK YOU for the collard-tortilla idea. Apparently my imagination is quite limited.

I love the collard green receipe in Alicia Silverstones book. I have eaten tons of them! Also, my husband took the Do it Yourself Greens and Beans meal in the Kickstart to heart. He first steams 2 bunches of swiss chard in a small amount of water and then drains them. Separately he sautes onion and garlic with some vegetable broth. He adds the zest of one lemon chopped up, saute annother minute then adds two drianed cans of black eye peas. To this he adds the juice of one lemon. Stir just until beans are heating. Place on top of the beans the drained chard, stir and then add the juice of another lemon. We generally eat as a meal over brown rice but it is good just on its own. It is beyond delicious! Another one we had recently is a kale one that was featured in veg. times. I swear it was one of the best things I have ever had. I will look up receipe and post. Be back.

That Beans & Greens sounds awesome! I've never had Black-Eyed Peas except at New Year's, but I think I need to get more grains in my diet, and the brown rice would be perfect for that. I get plenty of vegetables, but only about 5 servings of grains, and I'm trying to gain weight, so more grains it is! I think I'll try that idea over brown rice, like you said. You made it sound really easy.

Enjoy!!!!! We make a big batch so that we can have it for dinner and a ready made lunch the next day. I, too, never experienmented with black eye peas except on New Years. It was a huge eye opener. I think there was a similar receipe on the Jan. Kickstart program that my husband improvised on.
