Are they leaving this up?

Hi there everyone that is left here.
Are they leaving the forums up for us?
I could not believe it when I got an e mail that someone was chatting here.
I miss all this. I sorta lost my going power and slipped a few times. I really need the connection and support here.
Anyone have any ideas about quick and easy lunches? That seems to get me. I start grabbing at anything and before I know it I've eaten too much, even though it's vegan.
Glad we are all here and thanks for all your help. Very Happy

Aleta - I encourage you to check out www.sparkpeople.com and join one of the many vegetarian and vegan teams. There is all kinds of support, food logs, exercise videos and, and, and, AND - it's ALL free!! I am team leader of the "Eat To Live" team. There's all kinds of support and it's FUN!

When you join, tell them I referred you (wild4stars) and I'll get extra SparkPoints. With Spark Points you can give SparkGoodies to your friends. Check it out - it's fun and very helpful.

From past experience these message boards will slowly diminish as time goes on. When they start a new 21-day Kick start, everyone will move to that one. This is my third kick start and I don't think I'm going to do another one.

Hi Aleta,
My lunch usually consists of:
-- chopped salad (organic hearts of romaine, plus whatever vegetables are on sale that week: broccoli, carrots, bell peppers, zucchini, etc.)
-- serving of lentils with an ounce of avocado and a tablespoon of nutritional yeast
-- a Flax, Oat Bran & Omega 3 Pita Bread from http://www.josephsbakery.com/p-10210-Low-Carb-Flax-Omega-3-Pita-Bread (generally available at Walmart in the Bakery area)
-- maybe a small serving of fruit, if I didn't have a big serving with breakfast

That will usually keep me for about 3 hours, and then I'll have a medium-sized snack to hold me over till dinner (I eat dinner pretty late at night, cause of my work schedule). Snacks are usually:
-- mock-meat patty of some type (Gardenburger GardenVegan, Boca Vegan, Morningstar Farms Chick'n Grillers)
-- 1/2 to 1 cup of cut-up veggies with Walden Farms (http://www.waldenfarms.com/) calorie-free dressing for dipping (most are vegan, but check the ingredients first – some have egg whites)
-- a few crackers
-- 1/4 ounce of nuts

I make all my salads, lentils and beans on Sunday afternoon so that they're ready to go all week. I pack my lunch the night before so that in the morning I just have to grab my lunch bag and leave. It's easier and MUCH cheaper and healthier than any alternatives.

I usually pack a salad of various raw veggies with lemon wedges (portable and doesn't make it soggy), and a thermos of soup with beans in it, plus a piece of fruit. If you prep the salad veggies and make a soup on the weekend, it's a snap to pack your lunches each morning.

I use a thermos to keep my soups warm (because the microwave at our office is frankly disgusting, and so I don't have to heat plastic). But lots of soups would taste fine room temp too.

Another quickie: hummus wraps. I used to use tortillas or pitas for these, but lately I've been using big flat collard leaves with the stems cut out.

Obviously these things work just as well at home too. Like you say, waiting till you're hungry doesn't always lead to the best choices. I enjoy planning too--something to look forward to. Smile

Thanks Molly. When you make your salads they stay all week? I've done them one day ahead but never the whole week. I do some of my stuff on Sunday too. I don't work but have a class on Mondays. The rest of the week I'm doing stuff around the house and running to bank, store, etc. But I find it to much to stop and make lunch. Then when I get hungry I grab something that is too high in fat, like french fries. Confused
I will try your suggestions and see if I can get off the junk food. Even though I pick vegan. Rolling Eyes

Sorry to hog this thread here. But too busy last week to get back here.
I will go to sparkpeople.com and join. I have signed up for 21 day kidcstart 3 times but just couldn't get it together to start it until this time so I'm worried about going so long until September. This will help.

The salads do keep all week, as long as I keep them in gladware/tupperware, in the back, bottom area of the fridge - that's the coldest part of my fridge. I'm also really careful about buying absolutely the freshest lettuce possible on the weekend, so that it'll keep all the way till Friday. I've had one go bad a couple of times, but it was always because the lettuce was older when I bought it.
