Tonight i did a dry run for Thanksgiving. I made tofurkery.. hubby was very hesitant.. wondering what he was going to eat for dinner. He thought maybe he would get stuck with all the sides only.. He left it for last.. and made me try it first.
So i did, I said it was good. He didn't quite believe me. He tried it, said it was something to eat. Then as he got used to it.. he said it was good... then he read the box.. and said he was impressed!!! He hugged me and said we could have it every Friday night.. lol...
Now he wants to know if it makes good sandwich. And he saved some for tomorrow's dinner. Good news huh??

We also had speghetti squash.... walnut, apple & cranberry whole wheat stuffing... cranberry sauce (need to make my own next time..hfcs) ... carrots, potatoes (next time sweet potatoes).. Also have to do an apple crisp next time for dessert... I just had other things to do...

So do you have a sucess? It could be a new recipe or a person who likes the new food...
My sister asked for Undon Noodle Salad reciepe.. I guess her husband buys it at PeiWei... good news there too... baby steps... Very Happy

Wow, this is awesome!!! You've given me hope that maybe I can pull off Thanksgiving too!

Next week is my brother's birthday, and the family is serving something called "Bacon Explosion." It involves 2+ pounds of bacon, bacon & onion sausage, cream cheese, and barbecue sauce. It's evil.

I'll be brown-bagging it.

My family loves tofurky. I only get it once a year for our thanksgiving - some years it comes months after Thanksgiving. Every year we go to two turkey thanksgivings (one is very heavy on the meat, cheese, and margarine - one of these items is in each dish, even salads and veggies!!). A few years ago, I was due on thanksgiving, so I knew we would not be traveling, so I bought the tofurky. Since I gave birth on Thanksgiving, we had to wait a few days to have our feast. I sure didn't miss looking at turkey carcasses two days in a row, plus all the related grease!

I make a cranberry-pear relish. I think it is from the Voluptuous Vegan. I sweeten it with apple juice or orange juice concentrate.

Hi All.
Molly i am sure you will be able to pull off Thanksgiving. Tofurkey makes it easy. Although I am sure we will have 2 this year. As far as the sides go, they will probably be mostly vegan. People can add their own butter to speghetti squash...Now if we make a butternut one, we could coook it with maple syrup instead of brown sugar.. The dressing is super simple.. I heard don't even think of trying to pull off a pumpkin pie!.. so i will have someone else bring it.. and I can make an apple crisp..

Bacon Explosion... they have been watching too much man vs food.... I never thought people actually DID that... we sit and watch that show sometimes because we don't think it is possible... and the more vegan we become, it the less appealing the meat looks. Well alright that much NEVER looked appealing.. But now the cinnimon rolls at Lulu's cafe in San Antonio accross from the Alamo look pretty good.. they are as big as a plate.. feeds the whole family!!

I thought what a great combo ... cranberries and pear.. looked around on the web for recipes.. they vary sooo much.. lots of spices, orange juice, and simple.. What does your favorite have in it??? I am thinking the one from Southern Food looks good.. cranberries, pear, honey, lemon juice, sugar...

Sugar question.. what is the difference between raw sugar and unrefined sugar? are they the same? can they be used interchangeably??

Hey should we post a thread labeled Thanksgiving Recipes... what do you think????

@Molly.. Holloween you should dress up as a nurse and find something that looks like a defibulator for those people re-couping from Bacon Explosion...lol.. Laughing

We tried a red lentils and brown rice recipe with stir fried rainbow chard last night for dinner (red lentils and rainbow chard are both new items at our house). We all loved it! Son (age 12) gave both of them thumbs up (he chose the rainbow chard at the grocery store when I said "pick something from that section of leafy stuff"). Hubby was intrigued by how the red lentils sort of "melted" and got a creamy texture. Both recipes are from Veganomicon BTW. We're also planning more rainbow chard and then using the leafies and the stems separately (the stems would work nicely in a soup, same as celery, but y'all already know that).

Son got a kick out of how "green leafy veg" showed up on almost every section of our nutrition chart -greenleafy.org has a great colorful vegetarian/vegan nutrition wall chart - we've had it for years. Son loves to check out where new foods fit and also when he's looking for specific nutrients, he'll check the chart - like looking for vitamin C or vitamin B or whatever and then put together a snack or suggest a meal that contains those items.

I have trouble finding both red and green lentils. After an exhaustive search, I found both at Wegman's. And why the heck are green (DePuy or french) lentils so durned expensive anyhow?

I made a casserole called "Go for the Grains" for guests on Saturday night. It does call for cheese, but over the top, so it's easy to leave it off or use a vegan cheese substitute. It makes ten servings, so we had plenty of leftovers and had it again for dinner last night. Both times, we had it alongside roasted veggies. We stuffed ourselves! If anyone wants that recipe, it's at www.tasteofhome.com. It has bulgur, barley, corn, and black beans.

One thing I love about the co-op market we shop at is that I can get three different kinds of lentils in whatever quantities I want in the bulk bins. For our current 'experiments', I'm just buying a cup or two (as the recipes need) so we can try them out. Then we can get the ones we like in bigger quantities. That way, we aren't paying for a lot of something we're not going to use much.

That recipe definitely sounds interesting - off to go grab it...

Cranberry-pear relish:

1 apple, cut in 1/2 inch cubes
1 pear, cut in 1/2 inch cubes
12 oz bag of cranberries
pinch of salt
1/2 - 1 t cinnamon
1/2 c OJ
1 T apple juice concentrate or maple syrup
1 T grated orange zest (optional, I have never used it)

combine in saucepan. Cover and bring to a boil, lower heat and simmer, uncovered for about 20 minutes until it thickens and the fruits get soft.

I usually use either 2 pears, or 2 apples - whatever I have that is too ripe

For the past five years, I've been making Stuffed Acorn Squash for Thanksgiving as the main dish. Lots of colors, flavor and the fragrance that fills the house is wonderful.

Unfortunately, the rest of the family isn't vegetarian/vegan, but they do look forward to this dish.

You guys are the best!!!

French green lentils are only different because they stay more firm during cooking. Some people like them because of that. They have the same nutritional value as regular brown lentils. Red lentils are slightly higher in starch and slightly lower in protein than brown, but only by a little. They're ALL good for you! Smile

My mother doesn't want me to bring a Tofurky, so I'm bringing mini-pumpkins stuffed with a dressing made of wild rice, cranberries, and seitan. That's what I'll have as my "main dish", and hopefully some other family members will be willing to try them at least. I'm going to try to convince my mom to let me do the sweet potatoes, also, so that I can make them vegan (found a recipe somewhere for maple chipotle yams). We'll have salad, green peas or green beans amandine, (all automatically vegan), and my mother will make dressing that will be drenched in chicken stock. I'll opt out of the turkey, gravy, mashed potatoes, pumpkin pie, and whatever other desserts. Sounds like you guys will all have pretty awesome holidays!

I love the Tofurky deli slices. I didn't like giving up a good sandwich deli style but with Tofurky I didn't have too. My personal favorite is the Smoked Tofurky. Now I'm hungry Laughing

Keep an eye out - the peas might be the pre-seasoned/butter sauced frozen kind. The green beans amandine might also have a butter based sauce.

thank you for all the recipes!!! thanks to cathy for the relish.. i am going to try that soon.. looks like it could go with anything.. black bean burgers w/apple relish..
shane.. i really liked the goveg site. I might even try the pumpkin hummus for a take along to thanksgiving.
molly.... maybe your mom would do for u what i have to do for hubby.. he doesn't like the dressing loaded w/walnuts & fruit.. so i make two dishes.. one loaded and one classic. Maybe she would make one with chick stock and the other veggie. wouldn't it be interesting to see which people liked??
madcat.. i am new to the tofurkey.. i did't see deli slices.. my store only had 2 tofurkeys on the shelf... both had stuffing inside.. i didn't know they made others.. I will look around now that i know where to find it and what it looks like.

That's a great idea, though my mom already makes 2 different dressings – one for herself that's whole wheat, and one for the rest of the family that's made with white bread. I wonder if she'd be willing to make her whole wheat version w/o the butter and chicken stock. It's worth asking, at least! Smile

Wow, can they really tell after everything's in it that it's made with whole wheat bread? I think I'd just sneak in the whole wheat and see!

Sweet and Sour stir fry bok choy with brown rice was dinner tonight from cooks.com

Bok choy has a thumbs up from everyone here so that's one more green to add to the rotation. I was always a little leery about things like bok choy and chard because of the "bitter" flavor of greens I had heard about (not to mention that cooked "greens" were usually overboiled mushy spinach and collards). But, we're finding out that there are ways to cook them that account for the strong flavors and work well.

The peas only are frozen, bagged, but they're not cooked in sauce or butter... just plain peas. The green beans are always fresh. Can't get fresh peas at this time of year here in Texas, otherwise she probably would make them fresh, too.
