Day 8 What RU eating?

hi..
today i made some soup... lentil, corn, green beans, carrots, broccoli, mushrooms, lima beans, green pepper, and celery.. added some spices & organic veggie broth oh.. and brown rice.

b-same.. cereal w/bannana
l-soup
d-squash casserole w/cornbread topping.

what is on your menu?

b: usual cereal, plant milk, vegan chocolate chips
l: veg chili (last of the leftovers)
d: root veg hash
s: clementine

also, I just had a couple little pretzel bites that someone brought in. just white flour and salt and such, not a best choice but I was low on snacks - I'm saving the clementine for this afternoon when I've got a 3 hour meeting. I can nibble the clementine midway to keep alert - I usually get myself a cup of cocoa midway but I'm really trying to kick that because it does have dairy (non-fat milk powder). Late last week, I had some on both Thurs and Fri and I felt so bloated, as if I'd downed an entire 2 liter bottle of carbonated beverage in one sitting! So, it looks like dairy is phasing itself out of me, whether I want to or not Wink

B-tea, apple cinnammon steel cut oatmeal, satsuma mandarin
L- Spicy tempeh nori from veganomicon, edamame, and miso soup
D- grilled portobello salad

I'm really excited to make my first recipe from veganomicon. Also excited to make the portobello salad.

We love the Veganomicon! Hubby particularly likes it because of the references to campy old sci-fi stuff. If you're wanting to watch fat intake, be cautious because some of the recipes do come in a bit high in that regard. In many cases, you can simply sub something else (it's often oil used to saute aromatics like onion and garlic and that can be done with either a hot, dry skillet or with water or veg stock).

One thing we like about the 'Nomicon as we call it is the information in the front on how to cook various grains and such. Makes for a handy reference when venturing into new territory.

I got it for christmas and can't believe how big it is. The beginning is great.
It is great for this vegan kickstart. When there is something on the meal plan that I don't like I turn over to the veganomicon.
I picked 5 recipes this week. I hope they all turn out well. I am really excited.

B - Coffee with soy milk, a Humungus salad with Newman's own lime vinegairette (sp?).

L - Another Hummungus Salad with the last of the lime vinegarette (sp?), bread with earth balance, a navel orange.

S - Navel Orange

D - Planning to stop at a farm market for some fresh veggies, stir fry them quick, add in a little multi-grain pasta add a sauce of some sort, haven't figured that out yet...

Totday: B oatmela with berries
L leftove spicy collard greens with white beans
snack vegetarian brown rice sushi, fruit (seem to have several snacks!)
D Black bean burrito supreme, no cheese (from a favorite take out place)

I have to admit that I am a really really picky eater.
I didn't think I would last this long!

The only beans I like are black and kidney.
I like a good variety of veggies and all fruit.
I could eat pasta with marinara every day of my life

So my main foods have been wraps/naan with veggies and black beans, and edamame. A made a tzicki sauce with soy yogurt.
Or stir-fry with rice.
Or spaghetti

How am I doing so far!?!

@tisdaleh.. sounds like you are doing good! every once in a while you might try something new.. your tastes will change.. I remember my husband hated hummus.. now he can't get enough..
have you tried chickpeas? they are one of my personal favorites. Esp on a salad .... or making not tuna salad.

@ brittie.. which 5 recipes did you pick out? please keep us posted on how they turned out. we can't try them all, so you can help us out.

@ theodore.. how do you make scented truffle sweet potato? i found an oil and vinegar place that sells bottles of white truffle oil.. so incredibly good.. i didn't purchase ($) .. but wow imo white truffle is even better than the other..

Day 2 for me, with all 3 meals and a snack vegan [edit - just realized that the "italian sausage" I had for dinner isn't vegan - must remember to pull out the glasses and read the lable a bit more carefully next time].

B - cinnamon & spice oatmeal, with almond milk and dried cranberries

S - Lärabar "cashew cookie"

L - left-over raw kale and red pepper salad with black & pinto beans marinated in low fat balsamic viniagrette

D - spaghetti squash, spicy tomato sauce with mushrooms, red peppers and "italian sausage" (Lightlife Smart Sausages) and a sprinkle of nutritional yeast for a "cheesy" addition.

Tomorrow, back to just 2 vegan meals, as I will be having dinner at a friends house - I'll load up on the salad, and maybe they won't notice if I don't eat the meat Wink

Hi!
I've been picking and choosing from the KS menu. Today I had:

B: banana and an apple the size of softball
L: "pantry" soup - a little bit of anything I had in the pantry or freezer with veggie broth.
D: pantry soup, chick pea-salad sandwich
S: 2 slices of whole grain toast with apricot jam

Oh, and I had a can of Pepsi. But the rest of the day I drank water!!!
And I worked out! 12 minute mile on the track, then did some weights for about an hour. I feel really good!!

these are the 5 things I picked
* Spicy Tempeh Nori Rolls Day 8
* Homefries Day 15
* Corn and Edamame Sesame Salad Day 9
* Black Bean Soup Day 10
* Baked BBQ Tofu Day 11

Here is a picture of the spicy tempeh nori rolls

They were mighty delish.

Last night I fell in love with tempeh, it is way better than tofu.
This year I am going to cook my way through Veganomicon
I chose veganomicon because she stays away from fake meats and cheese. Less processed is ideal.

Hi cch,

I'm not sure how that snack item got there. What I actually had was an apple.

I'm sure I recently heard about some michelin starred chefs who hack into people's email accounts and start sprucing up their food diaries. Maybe that's what's happened.
