Day 9 What RU Eating?

Hi!
Can you believe it? you made it 9 days!! how cool is that?

b-cereal
l-everything soup (has brown rice in it too)
d-cornbread & blackbean casserole.

lots of water.. don't forget the water... i get busy at work and forget to even drink water.

water is good. I try to drink half my body weight with pure water.

b- granola with almond milk and a banana
l- leftovers: I have so much in the fridge
d- corn edamame sesame salad with side of soup

I always have my cup of herbal tea handy - if I alternate flavored water (no caffeine tea) with plain water, I know I tend to drink more than if it's plain plain plain.

Anyhow,

b: usual cereal, plant milk, chocolate chips
l: leftover root veg hash
d: nachos!! The cheesy sauce makes an excellent nacho queso and we'll have black beans, salsa, homemade guacamole to go on top.
s: clementine, fresh pineapple chunks, a couple of multi grain crackers

At our house, we are enjoying the menu as written. We have been vegan for seven years but we have a tendency to get trapped in routinely eating the same thing. Following the menu plan is great to help break us out of our rut. So today we are eating Kashi cereal -- it has a great high fiber content. Lunch is a big salad with my own dressing of orange juice and seasoned rice vinegar, and dinner is the simple tacos and Corn-Less Mexican salad since my daughter is very allergic to corn.

I too am drinking lots of water (8-10 glasses each day) but not to the point of over consumption. I have a good friend that was actually hospitalized for over consumption of water. She completely flushed away all of her electrolytes and essential minerals causing her serious problems. So while drinking water is excellent there is a limit even of water.

b-whole grain bread with spinach hummus, banana and soy milk
l-smoothie of blueberries, strawberries, orange juice and sunflower seeds + one handfull of almonds.
d-whole wheat tortillas with black beans, salsa, spinach hummus and corn.
s-apple, pear, carrot, cucumber, red bell pepper and orange.

@bc .. I don't think i could ever drink that much water. I forget to even have ONE glass at work.. then i get really thirsty. In fact when either I or my husband has a headache the first thing we think of is "how much water did we have today?"

I keep a 32-ounce mug of water on my desk at all times...usually end up drinking between 1/2 & 3/4 of it. At home, I have a 2-liter bottle of flavored seltzer water (no artificial sweeteners, no calories ... gotta love it!) and I usually drink most of that. Love my hydration! Laughing
