Hi there, I'm sorry to hear about the weight gain. I know that can be really frustrating and disheartening. I can think of a couple of reasons why it might have happened. -- Increased quantity of grains/starches. These always make me gain weight. Try increasing fresh, raw vegetables instead, cut back on the grains/starches. -- Increase in fruits can cause weight gain, too, just because of the sugar. I find that, for me, I have to be ultra-careful and get the bulk of my food (literally – the most volume) from fresh, raw vegetables, with much smaller portions left over for legumes, whole grains, fruits and nuts. -- Increase in portion size w/o realizing it. The "eat all you want" approach can be a killer sometimes! Eat until satisfied, but not more. You should still have some room left in there. -- The added fiber may be causing some extra bulk, if you're not used to it. That's a good thing, though, and will alleviate eventually. Another reason to keep increasing the vegetables! Drink lots of water, as well. -- Falling victim to the "if it's vegan, it must be healthy" mindset, and eating vegan junk food, eg. cakes, cookies, dessert-type things; smoothies, etc. I hope some of this is helpful.
