I can’t wait to see the first week’s recipes! But I already found a few that I want to try out at www.NutritionMD.org.

Hello! This is exciting! As a vegetarian for many years and as a registered dietitian I think this is a great idea. Both my mom and I are going to do the challenge!

I too am excited about the 21-day kick-start. I've been more or less a flexitarian for awhile. I am a registered dietitian and I know the health benefits of avoiding animal products in my diet. Recently I had an allergic reaction to a statin drug, and I have a strong family hx for heart disease. For now my Dr has agreed to try the Dean Ornish approach, vegan and lots of exercise, including yoga. I'm hoping this program will get me on the road to complete vegetarianism, and my dyslipidemia will improve. I admit I have eaten far too much saturated fat and cholesterol this past year and my blood work is the proof. I'm hoping some of my eating style will also rub off on my family as well.

Hi everyone! This is a great way to keep us all motivated! I am really excited, I love the idea of having the 21 day menus which will really help keep me on the straight and narrow. I am a vegetarian and have been a vegan in the past, but unfortunately have not always been very healthy doing either. I am excited to feel better and gain some confidence with this program! Thank you PCRM

What a great way to support a healthy change in diet for the new year. I'm looking forward to trading ideas and learning new cooking techniques.

Hey all. I have been a vegan for a year and a half now and can use all the help I can get to get fired back up about it. Kind of get in a rut eating the same thing all the time. Also, need to encourage some people close to me to take the plunge and I think this will help

I am glad to be a part of the group. I have wanted to go Vegan for quite some time now. Being a part of this 21-day kickstart is definitely the kick in the butt that I need!! I'm going grocery shopping tomorrow so I can be very, very ready!!

I am really so excited. I have been eating very little meat and no dairy for awhile now; more like the Mediterranian way of eating. I eat lots of whole grains and no refined foods. I'm really excited to test the waters of veganism!

I'm glad to have joined this group too! I've been vegan for about 4 months but would like to feel a bit more energized. (Though going to bed earlier might help ) Looking forward to diving in!

In case you missed it in today's email, here is a grocery list to get you started: http://kickstartdev.pcrm.org/resources/grocery_list.cfm. Soon, you will get access to the first 7-day menu plan which will have lots of ideas for foods to replace any and all meat dishes. But definitely go ahead and get some of the basics ready.

I did the 21 Day Kickstart in September, but I started eating vegan via PCRM in July (I think). I'm still eating a vegan diet. I lost more than a whole size last summer. Now I'm eating to maintain because I'm not ready to lose more weight. I haven't been this slender in many years so I want to get use to it. I wish everyone the best as they start this program. I'm sure you will enjoy the delicious recipes. Jean

After breaking my leg this past year I put on about 30 lbs due to being sedentary and my mom buying me "comfort foods". I'm excited about my first vegan attempt and I hope to be successful. I'm fine with not eating meat; recently, I've become regretful about eating anything that has a face One thing I am still hung-up on is dairy. Can someone tell me some harmful effects of dairy? I tend to do better when I can look at something logically and it would help if I had clear reasons to avoid it. Thanks for your help!

We will go into dairy a lot during this program, because this is a big topic. But I don't mind giving you a sneak preview: http://www.pcrm.org/health/PDFs/faq_dairy.pdf. What I love about getting dairy out of the diet is the immediate and obvious benefit. I think you will be amazed. Some of these benefits, depending on your situation, could be weight loss, clearing skin, pain-free joints, and better digestion. I can't tell you how many people I have counseled to give up dairy only to have them tell me that they thought a general feeling of discomfort was simply part of life! But then suddenly when dairy goes, discomfort goes with it.

I agree with the poster above (Susan?) that I just feel SO much better without dairy. I didn't realize it while I was consuming it, but after being vegan for a month I had some cheese. It came on my black beans at a restaurant, and I tried to pick off most of it, but still ate some. Boy was I sick afterwards! Also, as far as the animals are concerned, there are a couple of things that keep me motivated. First, the dairy cows are forced to keep having calves in order to keep producing milk. It bothers me that they aren't able to reproduce naturally - I find something just wrong about messing with her reproductive system. Second, I feel bad about taking the milk - the momma cow makes it for HER baby, not for me. Calves only get to nurse for a day or two, and are then taken away. The momma cow literally cries for her baby. Also, the male calves that are born to dairy cows get sold for veal, and before slaughter they live in horrible conditions. Finally, the dairy cows themselves are frequently mistreated. I don't want to support that. Hope this helps - please feel free to message me if you like!

A huge assumption on my part - I'm sorry. I am PCRM's director of nutrition education and a registered dietitian. I just jumped into everyone's posts not introducing myself. Anyway, there you have it. Nice to meet you all. Susan Levin, MS, RD
