What is your food today Sat Jan 29th?

Hi All, it's Saturday.. what does everyone do on Saturday? anything exciting? today i have to stick around the house... it is an employees first day on the job by herself.. so if she has questions, i need to be reachable.. but at least i am not shoveling.. it looks like a cooking day.. but i have no plans yet, except before i went to bed last night i covered some chick peas & red beans in water..(separate pots) they are boiling away as we speak.. i am thinking of making some hummus.. maybe avacado hummus... then the red beans...well i think it was fat free vegan.com that had a red bean burger... looked interesting.. of course i need to do some sort of soup this weekend.. and a salad.. like having easy and ready things in the fridge... soo b-i might get two.. eat a slice of whole wheat toast, work out.. b-#2.. well probably cereal l-?? d-?? we will see after looking at recipes.. so what are your plans? what are you doing today? what's your food? ttyl.. cynthia

Cynthia, I am planning a nothing sort of day. Cold and cloudy in Syracuse, but not snowing, for a change. Not sure what I'll eat today. Have to do penance for culinary indiscretions of yesterday. My neighbor brought me a huge plate of just-baked chocolate cake. How could I not eat it? Of course, I had the choice. I am relaxing my diet, but testing every step of the way.

I had 12 grain cereal for breakfast today with blueberries and soy milk. Lunch was leftover chili with spinach and bread, Dinner - haven't decided yet. Snacks - rice cakes with hummus and an apple Have a good day, it's beautiful here - sun shining but very cold.

so i have a plan for a few days.. old & new recipes.. dinner tonight Salsa Red Beans and Rice lunch sunday.. Thai Style Pineapple Jasmine Rice pg 97 of Vegan on the cheap. Sunday.. dinner...jeff novicks Bean Burgers & steak fries (both reg & sweet potato) Monday..lunch= novicks split pea and kale soup.. dinner-Better than take out Stir fry from vegan on the cheap. Also somewhere in there i will be making those pineapple & carrot muffins.. and my hegan has placed dibs on some of the chickpeas i made so he can make better than chicken salad.. So there we go for a little while.. i made a list.. so hopefully it won't be too bad$. Cynthia

I am having a rather lazy day today. Did my yoga, walked my dogs and played some video games. I have a pot of refrigerator dump soup on the stove ( clearing out old veggies to make way for new). I made roasted red pepper hummus. Other than that, not much cooking going on. I just pulled out my cookbooks to decide what to cook tomorrow. Maybe something from vegan with a vengeance. B: steel cut oats with raspberries and maple syrup. S: Veggie soup L: Baked potato with some succotash (Trader Joes blend of peppers, corn and edamame). S: pretzels dipped in hummus D: I think it has to be Rip's burritos with hummus and whatever veggies I have left in the fridge.

b: PB and banana wrap with a drizzle of agave on a whole wheat tortilla (hubby made them yesterday afternoon) l: mock tuna salad (garbanzos for the 'tuna' and navy bean-based 'mayo') on a bed of mixed greens and cherry tomatoes with a drizzle of balsamic vinegar and about half a dozen All-Bran multigrain crackers d: nachos tonight! Corn tortilla chips, black beans, salsa, avocado, not-cheese sauce s: cup of organic fair trade (but not vegan) hot cocoa after doing some clean up shovelling so we can see cars coming when we're trying to get out of the driveway Went grocery shopping this morning and realized that I hadn't put Chobani yogurt on the list - and didn't really miss it! That was one of the hardest things for me to get past during the Sept kickstart, just had to have my daily yogurt. --Deb R

Breakfast: Banana Oat French Toast lightly drizzled with maple syrup Snacks: bananas, raisins; Baked Tortilla Chips and Aldi's (Grandessa) Sweet Onion Salsa Lunch: Almost-Instant Black Bean Chili(from NutritionMD.org) - made for the first time - delicious! Dinner: Lentil and Brown Rice Soup - made for the first time

so even with a plan the meals turned out different.. tonight turned out to be better than tuna salad on whole grain bread.. grilled.. toasty brown.. also we stopped at an indian resturant.. had miso veggie soup.. and spring rolls...miso was ok.. like the whole mushrooms in the soup... spring rolls were excellent. WE also made the burgers and cooked the potatoes for tomorrow's dinner.. novicks easy meals.. tasty..i added liquid smoke and just a small spinkle of wheat gluten to the recipe... curious.. do you neeed wheat or flour to make wheat gluten to work?????? if i do.. well i didn't do so good.. i used cornmeal.. oh well. .. live and learn... Better Than Tuna Salad 2 cans Chickpeas 1/2 cup Mayo (I used Vegenaise) 1 Bell Pepper 2 Carrots 2 Celery Stalks 2 tbsp Parsley 1/2 cup Walnuts 1 tbsp Dijon Salt and Pepper Mash or blitz the chickpeas until you get the "flaky" texture of canned tuna. You don't really want to get it to the hummus consistency. Mix in all the other ingredients and spread on your favorite bread, crackers or on top of a bed of lettuce. You can mix up the recipe to your liking. I added a tiny bit of minced onion and only skipped the walnuts (none in the pantry) - and it was still incredible. HEY! Hubby stumbled on this very same thing on his own a week or two ago! We use pecans instead of walnuts (he is mildly allergic to raw walnuts). Also, since soy based products are out, he found a "beanaise" recipe that uses pureed, cooked, white beans (navy/great northern type) plus vinegar and seasonings to make a mayo analog. He's going to use what's left over from the last batch of mock tuna to make a ranch dressing recipe he found online.--Deb R
