Tried Dr. B's All-Amer Scramble on GF Bagel

Tried Dr. Barnard's All-American Scramble from page 60 of his new Cookbook this morning for breakfast.

I liked it and could just eat the "egg scramble" part alone..will try eating it by itself & adding a few hashbrowns on the side next time.

I have gluten/wheat issues, so I used a gluten free bagel. New brand that I tried called "udi's". They have a whole line of GF products. I've tried other GF bagels that were pretty good, but these were very light and crunchy.

Finally found the "Daiya" grated cheese at my local health food store. Smile Stuck the bagel with scramble & cheese under broiler for a minute to melt the cheese. Not bad!

You're so lucky to have great vegan groceries available nearby! I can't get Daiya where I live. I've heard it's high in fat, though... since I haven't seen it, I'm not sure.
That breakfast sounds delicious!

I hate to be the bearer of bad news, but Udi's products all contain eggs. http://udisglutenfree.com/products

Many gluten-free baked goods use eggs as a binder to replace the effect of the gluten.

I recommend the Food For Life gluten-free Brown Rice English Muffins as an option. They are vegan and really good toasted.

Food For Life also has GF vegan breads. Most of the new GF bread products that people rave about on my local listserv contain eggs or dairy. I worry about the effect on their health from adding so much animal protein and fat in their diets from these products.

I don't have gluten issues, but the brown rice English muffins sound wonderful. I think my hubby would like them too. Thanks for sharing.
