Veggie Burgers

I used to be the Burger Queen. I actually have not had a beef burger in over a year or more. I miss this yummy comfort food, but am having a hard time with the frozen varieties. You have to be careful of whey and casein as most brands have those ingredients. I'm not a "prepared food" kind of gal, as I love to cook. Does anybody have any recipes for veggie burgers that actually hold up to cooking and taste good too? Happy Health!

Okay, I have not personally tried this recipe. But my friend and co-worker Jill Eckart has, and she liked it a lot! It's from Dr. Barnard's new book, Get Healthy - Go Vegan. Basmati Rice Burgers with Pinto Beans Makes 6 burgers Preparation time: 60 minutes Cook time: 10 minutes This burger is so flavorful and has such great texture that even your meat-eating friends will love it and ask for more! ½ cup dry brown basmati rice ¼ cup vegetable broth 1 small onion, chopped 1 garlic clove, minced 1 teaspoon chili powder ½ teaspoon ground cumin ¼ teaspoon cayenne pepper kosher or sea salt, to taste freshly ground black pepper, to taste 1 cup canned pinto beans (drained and rinsed) ¾ cup panko breadcrumbs ¼ cup finely chopped fresh parsley non-stick cooking spray 6 whole-grain hamburger buns 1 large tomato, thinly sliced 6 butter lettuce leaves whole-grain mustard or chutney of choice 1. Cook rice according to package directions. Set aside. 2. Heat broth in a large skillet over medium heat. Add onion and garlic and sauté for 4 minutes. Add chili powder, cumin, cayenne, salt, and black pepper. Add beans and turn heat to high. Mash beans coarsely as they cook over high heat for about 2 minutes, being careful to not let the beans burn. 3. Add mashed beans to a bowl. Add rice, breadcrumbs, and parsley. Form into 6 patties. Place patties on a plate and let rest in the refrigerator for ½ hour. 4. Coat a large skillet (preferably cast iron) with cooking spray. Add patties (in batches if necessary, being sure to spray the pan with cooking spray in between each batch) and cook for about 4 minutes per side. Serve on buns with tomato, lettuce, and mustard or chutney. I didn’t know that: Uncooked pinto beans are beige with reddish brown splashes of color, looking almost as if they have been painted, hence their name “pinto” from the Spanish for painted. When cooked, the colored patches fade away leaving the pinkish beige bean we all know.

Recently, I read in a vegan blog or website about a new book out, called "Veggie Burgers Every Which Way: Fresh, Flavorful and Healthy Vegan and Vegetarian Burgers-Plus Toppings, Sides, Buns and More" by Lukas Volger. I checked it out on Amazon.com and since it is still very new on the market (published 8-1-10), there are only 4 user reviews. However, the user reviews as well as the professional reviews are all glowing so far, espectially those that have made several of the recipes. Anyway, it looks good enough to prompt me to put in my cart to buy! Check it out!

This sounds weird but is really good! We bought some unusual eggplant at the farmers market - they were pale purple and almost round. We sliced them and brushed them with olive oil and cooked them on the grill for burgers. With lettuce and tomatoes and vegenaise, it made a yummy burger. This variety is firmer and milder than the usual eggplant you get at the grocery store, but it would probably work with those too. We have also used portobello mushroooms for burgers.

I have tried, so far, the black bean burgers in Veganomicon. I thought they were really good, but I'd like to try others as well. Some of the commercial veggie burgers have GMO soy in them; plus there was talk that there are other substances in some of them that you just do not want to eat. And the cost is out of this world - $4.99 sometimes for a package of four!

I like a tweaked version of a Rachael Ray Chickpea burger. one 15-oz can chickpeas, rinsed and drained one 4-oz can diced green chiles 2/3 cup parsley 1 slice of jalapeno pepper (more if you want hot!) ~1/2 cup bread crumbs Pulse everything but bread crumbs in food processor until pretty smooth. Transfer to medium bowl and add bread crumbs, if needed, to firm it up so you can shape into patties. Cook in non stick skillet until browned. I usually make bread crumbs by putting a couple of slices of ezekiel bread in the blender. They do better in this recipe if you do that then let them dry out a bit. I have also left the bread crumbs out altogether. The original recipe called for an egg, so guess you could use the vegan egg substitute if you wanted. She also frys in oil. Pam

Mollyhorn, they taste pretty good and freeze well. Takes a time or two to decide how done to get them so they are cooked but not too cooked, kwim? I think the zip of the jalapeno makes a difference. I also sometimes leave out the parsley if I don't have it in the garden or on hand, and I suppose you could sub in cilantro if you wanted. I dont really like cilantro so it wouldn't be to my taste! Serve on a whole grain bun with regular burger toppings like lettuce, onion and tomato. Pam

I had a great recipe for black bean burgers that I absolutely loved but I cannot find it...in place of that, I use Sunshine Burgers. They are gluten free and vegan and absolutely delicious. They come in a box of three and they have different flavours, even a breakfast patty! Love them!

I make the black bean burgers from Veganomicon more than any other burger recipe. They're great and freeze really well, so I tend to make a double batch and freeze most of them. I also have a curry chickpea burger recipe somewhere that's really good (just has a lot of ingredients) but I can't find it right now. Anyway, here's Veganomicon's Black Bean Burger recipe. The only thing I do differently is double the amount called for on the spices. 1 can black beans, drained and rinsed 1/2 cup vital wheat gluten 1/2 cup plain whole wheat bread crumbs 1 tsp chile powder 1/2 tsp cumin 1/4 cup water 1 T tomato paste(or ketchup) 1/4 cup finely chopped cilantro (optional) 2 cloves garlic 1/2 small onion Mash the beans with a fork, making sure there are no whole beans left but you should leave some half beans. Add the wheat gluten, bread crumbs, chile powder, cumin, water, tomato paste and cilantro but don't mix yet (very important). Grate or finely chop the garlic and grate the onion and add to the bowl. Mix everything together with a fork and then knead with your hands until the mixture is firm and uniformly mixed (about a minute). Divide mixture into 6 equal pieces and form into patties. Cook in a nonstick pan for about 5 minutes on each side, firmly pressing down on them with a spatula once you flip them the first time. Once cooked, the patties should be very firm when you press down on them.

Actually, I forgot I emailed this recipe to someone during a previous Kickstart, so here's the Curry Veggie Burger recipe. I'm not sure why I thought it was a chickpea burger - it's been awhile since I've made it because I thought I'd lost the recipe. LOL Here it is: My brother gave me this recipe and I just made it vegan by leaving out the cheese. I think he said the original recipe came from Burger Bar restaurant in Las Vegas. Veggie Curry Burger 1/2 cup onion, diced 1/2 cup white mushrooms, chopped 1 cup bread crumbs 1 tsp curry powder 1/2 cup cooked soy beans (I just use whatever beans I have in the house) 1 cup cooked brown rice 1/2 cup cooked lentils 1/2 cup potato flakes (can use leftover mashed potatoes) 1/2 cup pumpkin puree (not pumpkin pie filling - just plain pumpkin) 1/2 cup grated mozzarella 1/2 tsp. salt 1/4 tsp pepper olive oil for cooking 1. Saute onions and mushrooms in about 4 tsp. water and season with salt and pepper. When soft and translucent, drain any excess liquid from the vegetables. 2. Mix together the bread crumbs and curry powder in a large mixing bowl and add the onions, mushrooms, beans, rice, lentils and potatoes. Mix until fully incorporated. Makes sure none of teh ingredients have excess moisture. 3. Add the pumpkin puree and mix until the mixture comes together. Add the cheese, if using, and then add the salt and pepper. 4. Shape into 4-5 equal size patties. 5. Heat 2 tablespoons olive oil in nonstick pan, add 2 patties at a time and cook for about 3 minutes on each side or until golden brown.

Hi! I can't wait to use your wonderful recipes! When I am in a rush I use Sunshine Burgers! It is a whole foods product, like we made a burger from the recipes I see here and we were able to package an sell it! All very yummy!

Oh WOW...thank you so much everyone for all of the recipes! They all sound awesome! My DH and I have made veggie burgers a daily item in our menu, and I don't know what we'd do without them. We were using Morning Star Asian Brand. When I read that most commercial veggie burgers are not appropriate because of what they have in them, sure enough, I re-read the box ingredients label, and YIKES! I don't know how I missed those no-no ingredients in the beginning when we first purchased them. Now it will be homemade burgers all the way! Thanks again!

You are right! Most of them arent worth eating Sunshine Burgers have only organic ingredients like organic brown rice, raw sunflower seeds,adzuki beans,hemp seeds,organic onion and bell peppers organic paprika organic peppers and sea salt. No added fat, same ingredients I used when making them myself! They are a life saver for me. I'm vegan and on Dr Mc Dougall's plant based eating plan with a health coach (vegangal.com) because I needed all the help I can get! Thank goodness for the Kickstart and all of you!

Thanks for all the wonderful recipes. I need to make modifications due to a wheat allergy, which brings me to Amy's Kitchen Bistro Burgers. They are vegan and totally gluten free AND they are yummy!!

Oat Burgers 4 cups water 2/3 cup soy sauce 1 Tbs. garlic powder 2 tsp. onion powder 3/4 C. walnuts 1/4 C yeast flakes 1/4 C sunflower seeds 1 Tbs. basil 1 tsp. coriander 1 tsp. sage 4 C. long cooking oats Place everything except oats into large pot and bring to boil on medium heat. Stir in oats just to mix together and simmer one minute. Set aside until cooled then form into burgers and place on sprayed cookie sheet. Bake at 350 for 15 minutes on each side. This make ALOT of burgers but I freeze them, or I juct cut the recipe in half.
