Red Beans and Rice

So... We get home from work and don't want to wait 2 hours to eat. I made a couple of things ahead... Yes i made a big pot of brown rice, and let red beans soak.
This morning while getting ready for work I am boiling the beans.
I would like a CHUNKY and Spicy red beans.. any ideas?
I am thinking green pepper, onion and celery for the veggies..
How do i make it a little soupy? I am thinking of not using tomatoes... maybe veggie stock and mush them up? Honey does not like "baby" food.

veggie stock would work to make it more soup like. If you've got some roasted red peppers on hand, maybe blend/puree them up and add them to the mix for color and texture. Add a dash of chipotle (whether just the ground spice or a favorite chipotle hot sauce) and it'll have a bit of a smoky spice flavor. If you've got mushrooms around, chop them up a bit and add them in as well for "meatiness". Some kernel corn would add a little sweet to counter the spicy. With beans and rice, you'll need something a little acid (which is why it's usually served with something tomato, like salsa) but a splash of cider vinegar or something similar would be tasty.

i found a recipe that i will try.. looks good.. Of course i will substitute canned beans for the ones i made, forget the oil, forget the salt, and probably not add so many onions. I think i will have to add it to the Fast Fresh & Frugel thread.. ( I should have added Fabulous to that stretch)
I might add cumin, or chilpolte chili pepper, and/or jalapenos. You could substitute pico de gyo instead of salsa.. So many easy variations!

I bet i could make this quicker than having pizza delivered!

Salsa Red Beans N Rice
1 medium green pepper, chopped
1/4 cup chopped red onion
3 green onions, finely chopped
4 garlic cloves, minced
1 tablespoon olive oil
5 cups cooked brown rice
1 1/4 cups salsa
1 (16oz) can kidney beans, rinsed and drained
1/2 tsp salt

In a large nonstick skillet, saute the green pepper, onions and garlic in oil till tender. Stir in the rice, salsa, beans and salt. Bring to a boil. Reduce heat; simmer, uncovered 2-3 min or till heated through.

The recipe turned out to be a really really good one!!! I would highly recommend it. Just look for a good quality salsa with no sugar. ..or pico de guyo. or make your own pico...
hubby liked it.. he had 2 healpings and said it was one of the best vegan dishes i have made..
i cooked it w/no oil, one yellow onion, my soaked & cooked beans...
a 10!!
