HI,
One again. it is snowing.. will jan ever end?

today is easy.. already made dinner last night...

b-whatever cereal, toast or oatmeal
**turned out to be not tuna sandwich**

Dinner will be a very simple meal - commercial baked beans (Bush's Vegetarian) along with boiled small potatoes, carrots, and onions. The beans are fat-free but packed with calories, which I need to stop the weight loss. Fresh fruit later in the evening. Probably some non-dairy "ice cream" which I can't tell from the dairy kind.

January will end soon - but will the snow?!

I am returning from an amazing place where Dr. Barnard and I did a weekend-long presentation. It's a retreat called Kripalu in the Berkshires of Mass. The food was incredible. I could not believe it.

I highly recommend to any of you to treat yourselves to this getaway spot. You ALL deserve it. And vegan food abounds!

A weekend away with vegan food - sounds lovely!!

Went to a championship swimmeet yesterday (all afternoon long) but packed couscous salad and fruit and beans for the duration. On the way home we stopped at a very large buffet. I am proud I chose all kinds of good veggie dishes -- no meat or dairy products. The only problem is the fat and the salt!

I'm grocery shopping today and am going to make the lasagne w/tofu and the african bean soup. My mother keeps raving about both of these.

Todays food:

L: Tomato salad/tortilla/kidney beans
D: Oatmeal Soup ?
S: Popcorn

I had to report back..
novicks 3 for 3 in the house today... i made the split pea soup..yummmm

then the burgers were good too .. I made them with the cornmeal.. they even had a little crispy crust..

the potato fries were the best ever.. so now.. when using the oven, i have to bake potatos/sweet potatos, let them cool overnight, slice them, put them on a lightly oiled pan (spray).. , bake at 425 on a shiny pan for 15 min or so...then hit em with the broiler..
This produced a sweet potato fry with a crispy peel and hot all the way thru, & lightly brown..

anyway.. it was all from novicks 5 ingredients or less, fast,easy & low $$.

Breakfast was a bagel with some jam, kind of boring. My lunch was outstanding though!!! I went to Panera Bread and got their Mediterranean Veggie Sandwich (hold the feta). It was so delicious. They made some kind of cilantro hummus that was just amazing. I haven't had dinner yet because I'm still so full from lunch, but I think I might actually just have some oatmeal and fruit. lol.

I made portobello mushrooms in bbq sauce from Bryana clark Grogans cookbook, served over broccoli polenta from Veganomicom (yum - I never would have thought to combine these). Also had roasted red cabbage with balsamic, and veggies (lettuce and celery sticks) with curry dip. Since I was trying something new, I had an old standard too - colcannon (my 5-year-old thanked me for this), plus leftovers (passito, rice, breaded carrots), veggies and onion dip, croutons, salad, home-grown alfalfa sprouts, and squash biscuits. My 7-year-old said that the table was bursting or busting!

Tonight I went on a baking spree to stock the freezer. As long as I had so many common ingredients out, I just kept going. I made Banana bread and muffins, pumpkin muffins, and banana bread. All made with WW pastry flour and sweetened with apple juice and the banana/pumpkin/apple in it.

So many questions.. where do I start?
I have never made polenta.. i sliced up that roll one time and we didn't like it.. so we went back to corn muffins..but now you have combined 2 of my favorites.. broccoli & corn.... I may have to try homemade..

roasted red cabbage with curry? it reminds me of a similar korean dish i saw on a cooking show.. kim chi.. korean hot cabbage..seems to be a staple..It is considered almost a national crisis not to have cabbage to make it. LA times did a whole article on it last year. Laughing

what is colcannon?

home grown sprouts? you are adventurous! are they easy? mold? go bad fast?

veganon's burgers & jeffs are totally different. veganon's uses wheat gluten. although I did not use as much as what they called for, they really held together well. I was not that big of a fan of that much gluten. If i try them again, maybe with even less, perhaps i would like them better.

jeff's burgers are good for what they are. they are ment to be quick, easy, and low $. They did turn out good with the cornmeal. i made them with red beans instead of black. so that changed the flavor. I am always more of a fan of fresh veggies, but then they wouldn't be so fast. If you put them in the fry pan and don't touch them till they get crispy on the bottom, they do produce a nice crispy crust and they do hold together better than most. when the other side gets crispy you can actually turn them over a couple of times if you want.. (my hegan likes to flip patties.) Anyway, for what they are, they are a little better than good, and worth keeping the recipe.

with that said.. i have not found ANY bean/veggie burger that would make my socks roll up and down.

Susan: I have come to believe the snow will NEVER stop. Again today with the snow. Blerg.

I didn't check in yesterday but here is what I had:

b: steel cut oats with raspberries. And a banana
l: veggie soup with brown rice added. a couple of crackers with hummus
s: a couple of beers at the pub, and some popcorn.
d: I stir fried a bag of frozen veggies (broccoli stir fry mix) with some soy sauce, ginger and garlic. Over a baked potato.

I guess it was a fairly uncreative day. I didn't feel much like cooking I guess.

To make polenta, I use corn grits - not cornmeal. I cup grits to 4 cups water, add 1/2 t salt. Isa's recipe put in 4 c finely chopped broccoli. I made half the recipe and used only 1 cup broccoli (cuz I was going from memory and got it wrong). It turned out fine. My daughter who doesn't like broccoli had seconds. When I make the plain polenta, I put it in a glass 8x4 glass pan. Once it is firm, I slice it and bake/broil it. I sometimes dice it for croutons - great on soup/chili. My kids love them! You can always try it with a fraction of the recipe. Get a small amount of grits from a bulk bin at a natural foods store (hopefully you have one nearby!).

The roasted red cabbage is from someones post from the last kickstart. I put balsamic vinegar on it, not curry.

The curry was a dip with a tofu base from Mother Natures Table.

Colcannon is a potato and cabbage or kale dish (cole crop, hence the name I guess). It also had onion, gimme lean sausage and daiya cheese. I got the recipe from Jane Brody's Good Food Book (not veg, but very good. I make substitutions for meat).

I make alfalfa and bean sprouts all the time. Very easy and so nice to have something homegrown in the winter. To do: Put 1T alfalfa seeds in a large jar (pb, mayo, etc), fill jar about halfway with water, soak 8-24 hours, put netting/tulle over the top of the jar and secure with a rubber band, drain and rinse, put the jar upside down at an angle in a bowl, rinse sprouts at least twice a day until done. When they are done, I rinse them in a big hole strainer to get the seeds out.

I liked the Veganomicon burger pretty well. There is one in vegan with a vengence that is made with tvp that is pretty good - my non-veg hubby liked them.
