Hi gang,

Trying to catch up on the forum messages and it feels good to be back. My computer bit the dust a couple weeks ago. Got a new one for an early B-day gift last weekend. Smile I feel like I've been gone and out of touch for a long time!

How's everyone doing with their vegan program? Anything new I should know about????

Welcome back. Boards have been rather quiet since the 21 days are up. But there's a new post now and then.

Yeah it's funny ... after everyone was saying they didn't want the boards to close and wanted to stay in touch after the program ended, there have been very few postings in the last couple of weeks. I'm staying on the vegan eating plan, still trying out new recipes. I haven't been eating as healthy as I'd like -- getting too much fat and sugar. So I need to work on that and get back to more veggies and whole grains. Welcome back!

I've been having a little too much carbs/sugar lately too.........time to get back on track. Needed to go shopping today. Was out of too many things, which added to me not eating balanced.

I'm guilty on the fats and sugars too. My diet is not 100% soda and pizza free. Embarassed

On that episode of Jamie Oliver's Food Revolution, when he opened the family's freezer and it was completely stuffed with Totino's pizza - I remembered how my freezer used to be 50% pizza and felt like I've come a long ways in a short time.

It's funny -- my freezer used to be full of ice cream, meat, and frozen dinners. Now it is almost empty, except for a package of Boca Burgers! But I need a bigger refrigerator to hold all the fresh veggies and fruit, cooked beans, and leftovers! Laughing

Welcome back! And, I have to add, that I agree that we all wanted the boards to stay open and now there are so few posts. I am checking the boards and learning new things everyday so I am still here! I find the boards very helpful.

On my end, I am still struggling to give up coffee, and it's the cream that I can't find a replacement for. I haven't tried coconut milk yet, but I will try that. Presently, I drink about 1 cup every other day, and I hate using the 1/2 & 1/2 because I want to be totally vegan. Before this new plan, I was drinking about 4 cups per day, so my family is saying I should aim for progress and not perfection.

Otherwise, I am trying staying on the Vegan eating plan and trying out new recipes.

I hear ya EJ. I don't have the coffee problem or the frozen pizza thing. But I do eat just tooooooo much.

Welcome back CraftyCat. Yes we are here by spells.

I ate too many beans yesterday at lunch and had a terrible problem with the g word. I drank ginger tea and then peppermint tea and after 2 cups of each I could go to sleep last night. Oh my. It lasted all day. I will never do that again.

Yes we need to hit here every day I think. I know I really do better when I have you all out there.

I tried something new last night - we made spring rolls for dinner. We had shopped at an oriental market last weekend and bought the rice wrappers, and finally had a chance to try these out. It was fun and they were really tasty and fresh. Here's a link to the recipe we used:

We used cilantro and it was a little too much for me, so I picked it out of the 2nd batch I rolled, but other than that these were great. I'm wondering if it would work to prepare them in the morning and take them to work for lunch, or if they would just get soggy and sticky. ????

Welcome back to cyberworld Craftycat. I so dislike the computer issues. I, too had my computer chrash last year and the worst part was loosing the "Favorites." I'm not sure how they have not come up with a way to save them. I have to hand write and log all of mine just in case. Glad to hear you are up and running again. Wink

I recently purchased 1000 Vegan Receipes by Robin Robertson book. I love it and it has given me something to aspire to since this was my second go around in the Kick Start, I felt like I was getting bored of the same receipes. So far have made Saag with chick peas which was great and a Two Tomato brunch Strata. Also made this great Asian Cole Slaw receipe that I got the link for on the Nonfat Vegan blogs.

Tex----We love the rolls too! Im so glad you tried them out. We make them with everything from facon bakin to tempeh to smoked tofu. We use shredded carrots, bean sprouts, onion, rice noodles, mango, cucumber, peanuts (yummy), hoisin sauce, chili and garlic sauce and the list goes on. With whatever we have leftover we roll them, wrap them up well in saran wrap (individually) and eat them the next day. They're not as good becasue the wrapper begins to harden but as long as you wrap them well they will be good for lunch the next day. We eat them the next day all the time.

I went to a cooking class last night put on by our state department of Health Management Services. By breaking up in four groups we were able to cook and taste 4 separate vegan dishes--one was spring rolls and they were the best! I'd always had them cooked in oil. What a pleasant surprise to find them fat free--believe me one of the other recipes had lots of fat! Falafel cooked in veg oil--wonderful taste but oh that fat.

It was my first class, lots of fun, learned lots and met people of like mind. That was the greatest part.

Almost like having you all on the boards. Thanks for coming back and keeping us on track.

That sounds like a wonderful class - both for learning the techniques/recipes and for meeting other local people interested in healthy eating. I am really impressed that your state put on a workshop like this! That's really a miracle right there!

This was a great class. Not all the classes are vegan but they are aimed at showing people we can cook rapidly and nutritionally without take out.

I don't know if our local department came up with this or if it's done statewide. I know the instructor is a volunteer but someone had to pay for the ingredients. All the students brought food for the food bank.

I love Robin Robertson, and this book is my current fave. I also have "Quick Fix Vegetarian" (all vegan), and "Vegan Planet." All are wonderful. I adapt many of the recipes to be lower salt/fat, but even with that she's one of the best cookbook authors around doing vegan recipes.

Essie, Im so glad to hear someone else loves this cook book. Everything is very simple. What receipes have you tried so far? Would love to know if they are good or not so that I could try. Next I am planning on making the stuffed eggplant with orzo and spinach.
