What is your food? Mon Jan 31st

hi.. yipee jan is ALMOST over.. and is going out with .. ... you guessed it.. snow tonight..  today.. well it never turns out to be what i guess.. i am thinking b-cereal... l-? lots in fridge & making more.. dinner.. oh i know that one .. i can't wait... from Vegan on the cheap.. Page 142.. Better than takeout Tofu Stir Fry. I am making a white bean soup with carrots, celery, and kale.. yumm..love kale in soup.. and i almost giggle at the check out.. a big bunch is only .99!! gotta love it. My daughter will be here for lunch. I have jeff Novicks pea soup lft over, there will be white bean soup, and i have ingredients for a heated rips burrito. I know she loves burritos.. so i am thinking that's lunch. dinner is going to be yummy.. i get to use my asian chili red pepper paste in stir fry.. (i had to travel 1 hour each way for that ingredient) anyway it takes tofu, broccoli, carrot, onions, garlic, ginger, & more.. yumm .. so that's it for me.. what is your food today?

I just had muesli with extra bran and almond milk. For lunch most likely frozen veggies with some nutritional yeast sprinkled on top - when cooked in the microwave the nut yeast gives a nice cheesie flavour. For dinner will most likely be leftover chili. Yesterday after church there was a soup lunch and I was going to offer to make a veggie soup but someone else beat me to it. When I got there I was so surprised that I had the choice of 2 vegan soups - one veggie and the other pea, both were delicious. Had to try both. Usually I end up taking my own to lunches etc. so was so pleased that 2 people had made a special effort so that I would have something.

Snow here too today. More shoveling.  But, hey, good exercise, right? b: oil-free hash browns with onions and spinach s: banana l: don't know for sure. I have a lunch "date" with a retired co-worker and I'm not sure what this restaurant will have to offer. They do have a nice vegetarian chili so I'll have to quiz them to make sure there are no dairy products. And maybe a side salad. d: probably some veggies over a baked potato. That has been the theme for the past several days. I am simplifying and trying to get back to basics.

b: cereal as usual l: two slices of pizza (homemade whole wheat crust, pureed diced tomatoes with homemade pesto, yes made with parmesan last summer before vegan, black olives, mushrooms, mozzarella), tossed salad (greens, cherry tomatoes, cuke, chickpeas) with balsamic vinegar d: not sure what hubby has planned for dinner tonight - I'll have to update later on when I find out s: apple, banana, clementine orange

Okay - got the update from hubby: dinner tonight is quiche - either spinach or kale - with a tossed salad on the side. It's another of the Veganomicon recipes that has become a regular on our menus. --Deb R

My updated lunch. The soup was not chili. It was beer cheese. Blech. So, I just got a plain baked potato and a side of steamed green beans. Easy and cheap! I'm a cheap date I guess.

B: oatmeal with frozen blueberries S: banana, raisins, applesauce cups, carrots dipped in Bean Dip L: whole wheat wrap spread with fat free refried beans and rolled up and cut up like Veggies in a Blanket(great for taking in a baggy to work) D: Sure Fire-Roasted Vegetables"soft"(first time I made this...ate the whole thing) Tabatchkin Split Pea Soup D: Smoothie with frozen raspberries, cocoa powder, frozen banana, almond milk I am trying to get a better balance of meeting the Four Basic Food Groups: Grains, Legumes, Vegetables, and Fruit

More snow The good news is I'm going to Florida in Feb. for a vacation  Dinner was the African Bean Soup -- it's really good, try it! Lunch hummus and veggies on tortilla S: marble rye B: Oatmeal & coffee w/soy milk
