I LOVE EGGS CAN U EAT EGGS, I MADE CURRIED BOILED EGGS ND VEGGIES WITH BROWN RICE...I WAS SO WISHING FOR CURRY...

Personally, eating something like a boiled egg would send me to the loo for the day ( - baked into a cake, I'd be okay (physically) but not a naked-by-itself egg (boiled, fried, scrambled, quiche, omelette, etc). Yet, I love quiche - that's why I was super happy that hubby found a recipe that uses navy beans in lieu of eggs and cream to make quiche  --Deb R

awwww tht suks... well i wont eat them again, all my friends were talking about how they made curry chicken over the weekend and i was like omg, i want sum curry, i had eggs in the fridge and just boiled them,so i feel bad,, other than that i been doing gud,, i just didnt want to waste the eggs... I head of smart ground which i am goin to go see if i can get some at H.E.B.. its supposed to taste like ground beef but its all veggies..Other than that i am still eating veggie and fruit , thanks for the support guys..

There are TONS of vegan curry recipes - they don't have to contain chicken, or eggs, or beef or anything like that. You can still enjoy curry to your heart(burns) content. In fact, I believe one of the dinner recipes from this last kickstart was a curry - check out nutritionmd.org for curry recipes (or any of your favorite vegan cookbooks and recipe websites) When looking at meat analogs, be sure to check the ingredient label for 'sneaky' animal ingredients like casein (dairy protein), egg white (some products use it as a binder), and so on. --Deb R

Hey Tommygirl, There are a TON of delicious vegan curry recipes. Check out vegweb.com and search for curry. Also, firm tofu and chickpeas are great substitutes for eggs in recipes if you want something chewy, like an egg salad, and there are a lot of egg-replacer products that you can use for baking, like Ener-G Egg Replacer, or flaxseed + water. I just wonder....I had found recipe and tried replacing eggs with potatoes about the same size as an egg for deviled eggs and I got rave reviews on my deviled potatoes. Would a potato work for curry???
