Anniversary Dinner, need suggestions...

I'm wanting to make something different than the usual meals I've been making (mostly from the kickstart). But I've no idea, any suggestions? I would like it to be fairly easy and inexpensive. Usually I would get sole stuffed with crab/shrimp, but that won't work now.

I'll probably do a couscous confetti salad but need a 'main' dish.

well what way do you want to go? pasta? spicy? gluten free? curry? kung pao? simple? alright to take some time? chocolate?..

how about chocolate covered strawberries? not a main dish.. but something to consider..

i am still new to this.. so i would find a vegan resturant and drive where-ever..

just a thought.... instead of having an anniversary focus on food.. why not focus on an experience..?

take your special someone to a beach, lay out a blanket.. have some strawberries w/chocolate & read poetry.. let them know you would marry them again and again..

or propose to your someone.. tell them how much they have enhanced your life and how you look forward to spending the rest of yours with them...

or an overnight ski package..leave the skis home...

put the pics of your wedding on a cd and ask people over ...

put a card in the bathroom, with a baby pic of you and him,then another card by the coffeepot w/high school pics.. then another somewhere else...w/older pics.. of course can be handmade cards..

one i liked a lot was a bowl full of hearts.. with writing of special memories and why that person is special to you.

as far as food goes.. hey it could be a subway sandwich.. look into his eyes..never look away...take a couple of bits so you are not starving.. then just kiss him.. he won't remember the food..

or tell him that you were going to make something special,but after today, that's not what he will remember anyway..

be creative. have fun..remember what a joyous day it was when you got married and try to just have a joyous day.. the food doesn't have to be a big thing.

I have seen a couple of recipes for seitan piccata recently, and I had thought of making that for Valentine's Day. I would probably serve it with a baked potato or risotto. My husband loves salad, so I'd have a lovely salad full of wonderful vegetables. I've been wanting to try making tofu cheesecake, so maybe I will do that for dessert. Yes, I am a foodie and I love to cook.

Thanks for the great suggestions. Not exactly sure what I'm doing tomorrow, but thinking of a mock chicken recipe with roasted red potatoes, couscous...

And movie tickets for the weekend because he won't want to go out tomorrow since he gets up so early!

tofurkey?? its easy..and good.. w/fav soup.. and steamed veggies..homemade rolls and dessert.

I am so lucky that my husband was a vegetarian long before I met him, and in his single days was known to eat a microwaved potato and heated up box of frozen chopped spinach for dinner, so he is extremely appreciative of the meals I make for him! Tonight I'm going to try mushroom burritos and I'll just have to adapt it to this WOE.
