Challenges...

I am very excited to get started and a bit nervous. From most of the posts it seems that alot of people are already at least vegetarian. I am not even close. In fact, once I go vegan, I will probably be putting some fast food joints out of business! Embarassed I am also a bit nervous because I will still be doing all the cooking for my meat eating, meat loving family. However, I will focus on the benefits of a plant-based diet and the hope that I can turn my health around. I can just hear my poor cells screaming for some nutrition! Anyway...I wish everyone a great journey and thanks for letting me vent (maybe someone else out there understands?). Have a great day!

I still cook chicken and fish for my husband, usually once a week. Try some of the "fake" meats. I make spaghetti with Boca Burger, he eats it and loves it. Gardein makes some excellent "chicken" products that he eats and loves. Once a week his parents come over and I cook real chicken for all of them. I eat everything they eat except the chicken.

In the beginnning it may not be easy, but STAY STRONG, resist, and I promise it will get easier. When you start feeling good, you'll have much more willpower than you think now.

Thank you for the support! My kids are gluten free
and there is gluten in alot of the fake meat products. But I will do this for myself first; they
can follow my lead. I feel better already! Thank you!

Just in case this will help you, here's a list of things you can serve that are vegan for you, but have added meat on the side (or added to just their servings) for your family. I have never tried to force my family to go vegan, so when I was with my first wife, I cooked meat for her and not for me. It worked out pretty well.

Pasta with tomato sauce (you can add ground meat, meatballs, or Italian sausage to theirs)
Bean burritos (cheese, sour cream, and/or taco meat)
Potatoes with chickpea gravy (meat on the side)
Stir-fry (add the meat last, or serve it in a separate dish)
Sushi (make some vegan rolls and some not)
and so on

Also, my family LOVES chickpea gravy, so when I serve that, sometimes no one even notices there's no meat. My fat-free version of it is at http://recipes.sparkpeople.com/recipe-detail.asp?recipe=732016
