What I ate vegan today...

This type thread has proven to popular at another message board I visit. (Link)
The idea is simple, just do a quick post saying what you ate at your last vegan meal. I know some people will just be following the menu plan, but others of us will probably be pursuing our own ideas. Threads like this are a good source of ideas.

For breakfast today, I had:
- oatmeal with milled flaxseed and rice milk.
- A few walnuts
- Green tea with soy milk.

OK, this is my plan for today.
B- oatmeal with raisins and cinnamon
L- okra, tomatoes, corn, and beans combo
D- mustard greens and a baked sweet potato

Thanks for starting this thread. I hope to find some new ideas for vegan meals. Smile

Off to lunch:

Soup: Vegetable quinoa
Greens: mixed greens w/ garden hemp seed dressing
Grain: short & medium brown rice
Bean: Enfriolata’s w/ suncheese
Veggie: baked kabocha & butternut squash & parsnips
Greens: mixed greens w/ pesto basil walnut sauce
Pickle: Beets

No, I don't cook all that. I eat out a lot at http://casadeluz.org/menu/index.php in Austin Texas.

For breakfast I had 2 apples. That doesn't seem like much breakfast but I was having an early lunch at my favorite vegan restaurant.

Lunch;
2 Sprout Wraps - They are awesome, I could go there and just eat sprout wraps as fast as they could make them.
House salad and Ramen soup. All of it was totally YUM. I actually ate too much, was totally full by the time I left, but it was incredible. Fortunately for me it's not close enough to be really convenient or I would probably gain weight eating there too often.

Not sure what dinner is going to be, right now I'm not remotely hungry. May just have a salad or some steamed veggies.

For dinner, I had:

Grilled avacado sandwich (made with whole grain panini bread)
Sauteed kale and mushrooms with olive oil, salt and pepper. It was all good.

I'm always amazed how easy it is to make red lentils. I buy them in bulk and keep them in my freezer all year round. Tonight I came home and threw a cup of lentils and a cup of wild rice into a pot and boiled them together until they were done. I put some spices in it and presto - a healthful dinner with minimal cleanup. My favorite kind of meal!

Today's vegan foods:

Breakfast: fried potatoes with ketchup
Lunch: Vegan sushi (avocado rolls)
Dinner: Pasta with a very garlicky spinach pesto (a little oil, a LOT of garlic, some frozen spinach, and a bit of vegan pesto I froze last time I made it. Very good.)

So far today, I had miso soup with tofu that my partner taught my kid to make. It was sweet of them to take care of me (I was having a rough morning). My lunch is going to be non-veg, and I'm not sure about dinner, but tomorrow, look out! Smile

For breakfast I had Oatmeal with cinnamon and raisins -- not very original!

For lunch, I had Anasazi Bean and Kabocha Squash stew. I used the recipe in The Kind Diet, which uses Black Soy Beans instead. I was out of them, so used Anasazi this time. Either way, it's a great recipe. Delicious!!

For dinner, we are having lentils and greens, salad, and citrus fruit for dessert... and champagne!

Breakfast; fresh fruit

Lunch; Whole wheat pasta with vegetables

Dinner; sweet potato soup (YUM) and a huge salad with hearts of Romaine, green peppers, greek peppers, onions, tomatoes and fat free dressing.

Snacks: I have had a couple kosher dill pickles, an apple.

Currently enjoying a glass of red wine and watching football.

I made the soup. Didn't really use a recipe. I can tell the basics of what I did.

I had 3 small, organic sweet potatoes that I had forgotten and realized they needed to be cooked. Peeled them and put them in a pot with:
Veggie broth, about 2 cups
2-3 garlic cloves
some cut up onion, probably about 1/4 - 1/2 cup
Italian seasoning, about a tablespoon
Covered and cooked it until the potaoes were good and tender.
Removed the cover and cooked it down until there was only about a cup of broth left
Put all of it in my VitaMix and blended until smooth. I had a very good sized serving and another is in the fridge for another day. It was pretty thick, so you could blend it with more broth if you like it more soupy.

It could be done with any blender, I have even done it with a handheld since the potatoes are so soft after cooking.

I know everyone thinks of sweet potatoes with marshmallows and brown sugar, but they really are good cooked with more savory seasonings!

Sorry I couln't be more specific, I often cook that way.

(I cook that way, too, and I can't stand sweetened sweet potatoes. One of my favorite ways to eat them is just roasted with seasoned salt and pepper.)

I love sweet potatoes for breakfast. My favorite veggie hash: 1 sweet potato, some onion, some sweet pepper; chop the sweet potato into 1/2 inch cubes and saute. add chopped onion and sweet pepper. when sweet potato starts to soften add dry sherry. cover to steam.

Tofutti Cream Cheese
Slices of Red Onion
Slices of Tomatoe
Cracked Black Pepper

Dried Apple Rings

Chai Decaf tea with Coconut Milk Creamer

This is my plan for today:

B - oatmeal with a little brown sugar and vanilla extract

L - blackeye peas over brown rice and a large side of cabbage cooked with carrots

D - leftover greens from last night and a baked sweet potato

S - fresh clementines and hot tea

Hi Doris, your lunch sounds yummy, totally comfort food. Do you have a recipe for the black eyed peas or did you just wing it? For dinner I'm having black bean salad with whole wheat pasta, lemon and a bunch of parsley. It's nice and refreshing.
