How will this work with being a diabetic? Will this process be in line with the low GI diet for Diabetics?
I know as Vegans to fill "full" most load up on the pastas and the rice, things most diabetics should stay away from? Will there be special instructions in regards to the diabetics who want to try this?

I think you should get a copy of Dr. Barnard's book "Dr. Neal Barnard's Program for Reversing Diabetes: The Scientifically Proven System for Reversing Diabetes Without Drugs". If you can't get a copy, I'll mail you mine. Basically, a low-fat, vegan diet with plenty of whole grains is the way to go. You can do it!

I just wanted to say, I rarely eat pasta and rice. Smile Maybe 1-3 times a week.

I fill up on beans, legumes, vegetables, and sometimes soy meats.

Quick answer: yes, this diet works wonders for people with diabetes.

I highly recommend you spend as much time as possible reading all the information you can find starting from this page: www.pcrm.org/diabetes. I couldn't possibly put everything I want to say in this one message!
