Easy and cheap milk substitutes
Posted Wednesday, December 30, 2009 at 3:22 PM

For those of you who don't want to pay supermarket prices for soymilk to pour over your cereal, or who don't like soy, you might be interested in making milk the way I do:

Vegan "milk"

1 cup brown rice OR raw nuts (I prefer cashews or almonds, but any raw nut will do)
2-4 cups water (I use 4 cups of water, but it's creamier with less)

Blend in a blender or with a hand blender. That's it.

Some people prefer to add a little salt, vanilla, and/or sweetener, but I like it just the way it is. Also, most people prefer to strain it, but I don't -- I just use it until I get toward the sludge at the bottom, then throw the sludge into a pot of soup or hot cereal or something. This keeps for a few days in the fridge.

(By the way, I use cooked brown rice, not raw.)

I have NEVER liked milk so never went in search of a substitute. However, I have heard that almond milk is quite good.

Yeah, almond milk is good. I haven't tried the store-bought kind, but it's good made fresh.

Thanks for the recipe. I drink soy-milk.

If you like soy milk and want to save money by making your own, investing in a soymilk maker might make sense. The initial investment is about $125, but it will pay for itself in about 6 months. The machine I bought from soymilkquick.com has lasted me for 6 years and is still going strong.

My cost comes out to about 50 cents/half gallon. It requires soaking soybeans overnight, plus 15 minutes to make the milk and about 10 minutes to clean the machine, which I do about every 3 - 4 days. I use soy milk primarily on oatmeal and in recipes, not as a beverage.

I make a RAW almond mylk with dates, vanilla bean and Raw cacao. OMG, knock your socks off!!! 1 cup soaked almonds to 4 cups filtered water, add soaked dates, vanilla and cacao in a high powered blender like a vita mix and let it rip! I also like to add a dash of cinnamon.

I like the idea of making my own nut milk! I've been enjoying storebought almond milk, but it is a little pricey.

Could I ask which nuts you've made milk out of? At my store, I've seen hazelnut and almond, but never walnuts or pecans (which happen to be my favorite nuts besides almond).

Have you ever made walnut or pecan milk...or think why they wouldn't be good?

Thanks!

I love pecan milk so much I want to marry it and have its children, but I can't always afford to be buying pecans. I do like cashew milk, though, so usually, that's what I make. I've also made almond, brown rice, wheat, white rice (passable, but bland), and sesame (start with tahini, not with sesame seeds). They all worked fine.
