Cooking like a fiend today!

OK, I'm doing all my food prep for the week today so I will have food available when I need it.

So far the list is:

-applesauce (pressure cooked apples, no sugar, to put on oatmeal instead of cooking with apple juice concentrate as suggested in the menu planner)

-Chickpea burgers

-the carrot and red pepper soup

-confetti salad

-hoppin john salad but subbing in black beans for the black eyed peas.

-hummus (just canned garbanzos, lemon juice, water, garam masala, garlic. No oil, no tahini)

-Kale (in the pressure cooker)

-brown rice

-vegetable or lentil soup, havent decided but usually have the makings around for both

-curried cauliflower

Hmmmm, that's a lot of cooking for one day! If it doesn't all get done, will finish up tomorrow. I know I will do better if I have appropriate choices available. Most of the stuff (except the bean salad) can also go into the freezer if needed. I usually freeze soup up in paper cups for individual servings anyway.

I was thinking of doing some cooking, but I am totally worn out just reading your post. I'm going to need to rest. Laughing

WOW, Pam! That is impressive! You've tired me out too! I thought I did some cooking by making the couscous salad, Hoppin' John salad and pepper and carrot soup. I find that if I make three things at a time I have enough for several days and then make three more things. It's fun, huh!

Can tell you from experience of other Kickstarts that these are delicious recipes.

Well, I only got the carrot/red pepper soup, couscous salad, hoppin john salad, kale and brown rice done.

I've got tomorrow, so will definitely need to get the veggie burgers, hummus and applesauce done.

I did simmer some spaghetti sauce, just a jarred kind but added onions, red pepper and mushrooms to jazz it up.

Did fix a pan of lasagna for the non-21 dayers in the household. They can eat on it all week then they are on their own!! (I will have whole wheat pasta or gnocci with the mushroom sauce!)

The cous cous salad was much better than I thought. I always THINK I am going to like couscous then don't really care for it. I did get a new box thinking it might be better to start off fresh. Did 1/2 the amount of couscous to the amount of veggies listed. Soup was very good too! Subbed in black beans for black eyed peas and that is pretty close to a salad I already make.

When I've tried vegan before I didnt really use menu plans, then got sick of eating the same thing and didnt stick to it. I am psyched up this time!!

Pam, while I TRULY appreciate your enthusiasm to get on board with this Kickstart program and adopt a vegan diet, I must say that I think your "cooking frenzy" will drive you nuts if you try to keep it up! Sounds like a radical change to your current life. The daily menus are available to help you transition, and will guide and help you to create future meals and provide menu guideline/options for your future. I, like all here, want you to succeed, but don't want you to get frustrated and overwhelmed with massive cooking! Use the daily menus as needed, but begin to see the individual ingredients as options in your future, and learn to create dishes and meals with variations that YOU like on your own for use later in your new lifestyle. So many internet sites are available to help you and offer many options!

Thanks for the advice!

I usually do a massive cook on Sundays anyway..no time during the week, so if you're cooking one thing it's usually just as easy to cook several. One thing that is easier with vegan or vegetarian cooking is you don't have to worry about meat contaminated cutting boards to clean in between different dishes.

Also, it didn't bother me to not get every thing marked off on my cooking to do list, altho I know that would have bothered others! Laughing Besides, I do have today to finish up...

Yesterday I cooked a large pot of split pea and lentil soup, brown basmati rice, couscous, and the best black beans I have ever had! I enjoyed them for breakfast on a sprouted corn tortilla, with a tofu breakfast scramble.

Mmm, graaaains!

Wow that is a lot of cooking! I would love to cook ahead for the week but don't want to clean up that much of a mess at once! So far I've only made the apple cinnamon oatmeal for breakfast. Since I'm in AZ I still have about 3 hours before lunch but I'm planning to make both the soup and salad.
